Keto Friendly Coconut Shrimp

Keto friendly coconut shrimp is a great low carb recipe and a way to enjoy fried shrimp while on the keto diet.

Typically coconut shrimp is served with a sweet dipping sauce, I served mine with an easy to make low-carb aioli.

But if you have a different low carb sauce just use that for dipping instead.

These shrimp are fried to crispy golden perfection and you won’t even miss the carbs.

How to make keto friendly coconut shrimp

First I peeled and deveined a pound of jumbo shrimp.

Then pat them dry really well to help the breading stick.

For the breading I am using a cup of unsweetened coconut flakes and some almond flour seasoned with kosher salt and pepper.

I have almond flour on hand but if you have coconut flour that works too!

Ingredients for the fried shrimp

Set up your breading station with a cracked egg in one bowl and the coconut breading in a separate bowl.

Place a saucepan on the stove over medium heat and add enough vegetable oil to fill it one to two inches deep.

After about four or five minutes check the oil with a thermometer, once it reaches 350 degrees we are ready to fry some shrimp.

Fry about four shrimp at a time, coat with the egg and then coat very well with the coconut breading and then into the oil.

These will cook pretty quickly about one to two minutes.

Once they’re golden brown remove them and place on paper towels and repeat frying the remaining shrimp.

Serve keto friendly coconut shrimp with a low carb dipping sauce of choice!

I made a quick aioli by combining mayonnaise, old Bay seasoning, lemon juice, and a few dashes of hot sauce.

Keto Friendly Coconut Shrimp has an easy to make low carb coconut breading for the shrimp that is fried to crispy perfection!

Ingredients

Keto Friendly Coconut Shrimp

  • 1 pound jumbo shrimp peeled and deveined
  • 1 egg
  • 1 cup unsweetened coconut flakes
  • 3 tablespoons coconut flour or almond flour
  • kosher salt, pepper
  • vegetable oil (enough to fill a small saucepan an inch or two deep)
  • Optional: old Bay aioli dipping sauce or low carb dipping sauce of choice

Old Bay Aioli

  • 1/2 cup mayo
  • 1/2 tablespoon old Bay seasoning
  • 1/2 tablespoon lemon juice
  • a few dashes of your favorite hot sauce

Instructions

Keto Friendly Coconut Shrimp

  1. Pat the shrimp dry very well with paper towels.

  2. Crack the egg in one bowl and beat it with a fork. Combine the unsweetened coconut flakes, coconut or almond flour, kosher salt and pepper in a separate bowl.

  3. Fill a small saucepan about one or two inches deep with vegetable oil. Set it over medium heat for four to five minutes and use a thermometer to check when the oil reaches 350 degrees.

  4. Once the oil reaches 350 degrees dip a few shrimp in the egg and then coat well with the coconut. Gently place four to five shrimp at a time into the oil for one to two minutes.

  5. Once golden brown, remove them and place on paper towels. Repeat with the remaining shrimp.

  6. Serve with the old Bay aioli or low carb dipping sauce of choice.

Old Bay Aioli

  1. Combine all ingredients in a bowl and serve with the shrimp for dipping.
