Garlic Almond Green Beans

Garlic almond green beans are fancy enough to serve on any holiday, but also easy enough to serve as a weeknight side dish.

This recipe does make a lot but it’s very easy to cut in half if you are not serving so many people.

I brought this to our family’s early Thanksgiving and it was a huge hit!

Typically I bring a green bean casserole which can be a little heavy with all the other Thanksgiving side dishes, everyone said this was a delicious lighter side dish.

When serving this at home I incorporate the almonds into the green beans.

But with serving so many people this time I put the almonds, cranberries, and feta cheese on the side so everyone could top their own.

How to make garlic almond green beans

I am starting with 2 16 oz bags of French green beans.

These are convenient because they are already trimmed and they steam in the bag in the microwave.

Mine microwaved for 2 1/2 minutes for each bag.

If you have regular green beans those work too, but I would trim them.

And if yours don’t come in a steam bag, simply boil in salted water for 5 minutes, drain and set aside.

Then set a large skillet over medium heat and add some butter and olive oil along with a diced onion, kosher salt, and pepper.

Cook the diced onion for about four to five minutes, stirring a few times.

Next add a bunch of minced garlic, I went big and did 8 cloves.

Cook the garlic and onions together for a minute then add the green beans, more butter, old Bay seasoning or seasoning blend of choice, kosher salt, and pepper.

Toss the green beans combining them together, I had the best luck using tongs.

Cook them for four to six minutes or until the green beans are cooked how you like.

Finally toss in a cup of toasted sliced almonds or you could serve them on the side like I did.

These did not last long at my family’s Thanksgiving… mental note for me to make even more for next year.

Ingredients

  • 2 16 oz bags French green beans (mine came in a steaming bag for the microwave)
  • 6 tablespoons butter
  • 1 tablespoon olive oil
  • 1 onion finely diced
  • kosher salt, pepper
  • 6 to 8 cloves garlic minced
  • 1 tablespoon old Bay seasoning or seasoning blend of choice
  • 1 cup sliced toasted almonds
  • Optional toppings of choice such as goat cheese, feta cheese, and/or dried cranberries

Instructions

  1. Cook the green beans in the steaming bag in the microwave according to package directions. Mine cooked for 2 1/2 minutes each.

    Note: If you have regular cut green beans trim them if needed. And if you don't have yours in a steaming bag boil them in salted water for 5 minutes, drain and set aside.

  2. Set a large skillet over medium heat and add 3 tablespoons of the butter and the olive oil. Once the butter has melted add the finely diced onion, kosher salt, and pepper. Cook the onion for four to five minutes.

  3. Add the garlic and cook for one minute then add the green beans, the remaining 3 tablespoons of butter , old Bay or seasoning blend of choice, kosher salt, and pepper. Combine everything in the skillet, I had the best luck using tongs.

  4. Cook the green beans in the skillet four to six more minutes tossing a few times, or until the green beans are cooked the way you like.

  5. Stir the sliced toasted almonds in with the green beans and serve with optional toppings of choice such as goat cheese, feta cheese, and/or dried cranberries.
