Green Chile Corn Casserole
Green Chile Corn Casserole is probably not something I would make for a weeknight dinner side, but Thanksgiving, Christmas, Easter, or in this case Halloween.
This side dish recipe is amazing for any holiday or celebration.
My friend invited us to a Halloween party where she was making chili, I instantly thought of cornbread.
But then I one-uped myself and went with this cheesy, delicious corn casserole. SOOOOO flipping good!
It’s like cornbread, but a softer, creamier texture and lots of cheesy goodness 🙂
How to Make Green Chili Corn Casserole
We are starting with a box of cornbread mix, but adding lots of yumminess to it.
I used the Krusteaz Honey Cornbread mix, which gave the perfect amount of sweetness.
Canned corn and creamed corn, butter (ohhhhh SO much butter), sour cream, cheese, and of course the green chiles.
When I brought this to the Halloween party everyone asked what was in it, and when I said green chiles they said “ohhhh, that’s what’s extra special about it”.
Put everything in a bowl, minus the cheese, and mix together with a spoon.
Then add in the cheese and fold that in until evenly combined.
Pour into a greased 9×13 casserole dish and spread it evenly.
Bake at 350 degrees for 45 to 50 minutes.
Serve Green Chile Corn Casserole while still warm 🙂
Seriously SO good as a side to any meal or with chili!

Green Chile Corn Casserole
Green Chile Corn Casserole is a perfect holiday side dish, start with cornbread mix and add green chiles and cheese making it extra special
Ingredients
- 1 15 oz box cornbread (I used Krusteaz Honey Cornbread)
- 2 eggs
- 1 can corn drained
- 1 can creamed corn
- 1 stick butter melted
- 1/2 cup sour cream
- 1 4 oz can green chiles
- 2 cups shredded cheese of choice (I used Mexican blend)
Instructions

Put the cornbread mix, eggs, corn, creamed corn, melted butter, sour cream, and green chiles in a bowl and stir until evenly combined. Add the cheese and fold the cheese in until evenly mixed.

Pour this mixture in a greased 9×13 casserole dish. Bake at 350 degrees for 45 to 50 minutes.
