Smoked Caribbean Jerk Shrimp
Most great dishes come with a good story. And this Smoked Caribbean Jerk Shrimp recipe has a wonderful memory attached for me.
Many, many years ago my dad and I went to a Caribbean restaurant and ordered a very similar meal.
We usually have great conversations and laughs at lunch, but this time the only sounds being made were “Mmmmmmm!” with an occasional “How can something so simple be SOOOO good?!”
This was honestly before I really started getting into cooking. But my dad recreated it at home for everyone else in the family to try.
So he came over last week to make it for us… and for me to write his recipe for you to all enjoy as well 🙂
How to Make Smoked Caribbean Jerk Shrimp
Any store bought Caribbean Jerk seasoning will work.
Start with two pound of jumbo shrimp that have been peeled and deveined and put them in a cast iron skillet or foil pan.
Sprinkle 3 to 4 Tablespoon of the jerk seasoning over top, add some fresh thyme sprigs, and pour just enough olive oil to almost cover the shrimp.
It may seem like a lot of olive oil, but that’s one of the BEST parts is soaking up the flavorful oil with bread 🙂
Then place the pan in a smoker or Traeger pellet grill set to 250 degrees for 45 minutes.
Stir it a few times as it cooks to mix up the seasoning and break down the thyme.
Serve Smoked Caribbean Jerk Shrimp with plenty of bread for dipping the olive oil 🙂
I just baked and sliced a French baguette from the bakery and it was amazing!
This would also be incredible tossed with pasta.
Mental note to self…make that happen SOON 😉

Smoked Caribbean Jerk Shrimp
Smoked Caribbean Jerk Shrimp is perfect when served with bread to dip in the Caribbean Jerk olive oil and the smoked shrimp are fantastic!
Ingredients
- 2 pounds jumbo shrimp peeled and deveined
- 3 to 4 Tbsps Caribbean Jerk seasoning (I used Savory Spice)
- 3 to 4 sprigs fresh thyme
- olive oil (enough to almost cover the shrimp)
- fresh bread for serving (I served with French baguette)
Instructions

Put the shrimp in a cast iron skillet or foil pan. Sprinkle the Caribbean Jerk seasoning over top and place the fresh thyme sprigs around the pan. Pour enough olive oil to almost cover the shrimp.

Place the skillet or pan into a smoker set to 250 degrees for 45 minutes to an hour, stirring a few times.

Serve with bread to dip in the Caribbean Jerk olive oil with the shrimp.
