Blackstone Chicken Fajita Quesadillas
Blackstone Chicken Fajita Quesadillas were even better made at home on my griddle (sorry, restaurant)!
We are very blessed to have one of the most incredible Mexican restaurants right by our house.
Recently they added fajita quesadillas to their menu and you all know I had to recreate the recipe at home.
I’m pretty sure it’s because of the seasoned Blackstone griddle, plus the large cooking space allowed me to make all four quesadillas at once.
So much less expensive making them at home too.
Taking this big family out to dinner can cost a small fortune!
This make four total, but fed 6 of us because of how big the quesadillas are.
And we even had some leftovers 🙂
How to Make Blackstone Chicken Fajita Quesadillas
My trick for anytime I cook outside is to put all of my ingredients on a tray so I’m not going in and out of the house multiple times.
First, preheat the Blackstone to medium heat.
Once hot, add some vegetable oil or butter and a sliced onion, sliced bell pepper, and sliced poblano pepper.
Cook 3 to 4 minutes, stirring and flipping a few times.
Then add a pound of diced chicken, garlic, and a packet of either taco or fajita seasoning.
Or use the Southwest Seasoning from Savory Spice to really add some extra flavor. Sadly I ran out but already ordered more!
Cook 5 to 6 minutes, stirring a few times. I use my handy dandy hibachi spatulas!

Ahhh… just take a moment to appreciate the chicken fajitas just like this!
Once you make this for yourself, you’ll also appreciate how amazing they smell 🙂

Move the chicken and veggies to one side of the griddle.
Add more oil or butter and place four large tortillas flat.
And sprinkle cheese on one side of each tortilla.
Then add the chicken and veggies over the cheese.
Next up add more cheese over top of each.
Use a spatula to fold the empty side of the tortilla over the filled side.
Flip them and remove from the griddle once the cheese is melty and the tortilla is crisped to your liking.
Serve Blackstone Chicken Fajita Tortillas with toppings like sour cream, salsa, lettuce, and/or hot sauce 🙂

Blackstone Chicken Fajita Quesadillas
Blackstone Chicken Fajita Quesadillas are insanely delicious and easy to make because they are all done on the Blackstone griddle
Ingredients
- vegetable oil or butter
- 1 onion sliced
- 1 red bell pepper sliced
- 1 poblano pepper sliced
- 1 pound chicken breast cut into thin strips or bite size pieces
- 1 Tbsp garlic paste or minced garlic
- 1 packet taco seasoning or fajita seasoning
- 4 large burrito size tortillas
- 3 cups shredded cheese (I used Mexican blend)
- Optional toppings: sour cream, salsa, shredded lettuce, hot sauce
Instructions

Put all ingredients on a tray to easily carry outside. Preheat the Blackstone griddle to medium heat.

Put some vegetable oil or butter on the Blackstone and put the onion, bell pepper, and poblano pepper on the griddle. Cook 3 to 4 minutes, stirring and flipping a few times (I use hibachi spatulas).

Add the chicken, garlic, and taco or fajita seasoning packet and cook another 4 to 5 minutes, stirring and flipping a few times.

Move the chicken and veggies to one side of the griddle. Add more vegetable oil or butter to the empty space of the griddle and place the tortillas flat.

Sprinkle some of the cheese on one side of each tortilla, then use the spatulas to put some chicken and veggies over the cheese, add more cheese over the chicken and veggies. Use the spatulas to fold the empty side of the tortillas over the fajita filling.

Flip the quesadillas and remove from the griddle once the cheese is melted and tortillas are cooked to your liking. Serve with optional toppings such as sour cream, salsa, shredded lettuce, hot sauce.
