This Simple Shredded Chicken for Meal Prep is an absolute lifesaver when it comes to meal planning.
I make it pretty often, keep it in the fridge, and then plan meals around it. It’s quite the time saving trick.
Since the chicken was ready to go this is actually a no cook meal 🙂
Here is how to make Avocado Chicken and Mango Lettuce Wraps
In a bowl add 3 cups of the shredded chicken, a large avocado, chopped cilantro, lime juice, and mayo.
You could easily substitute nonfat Greek yogurt for the mayo if you prefer.
Season with kosher salt and pepper as well.
Also add some diced mango, saving some to garnish the top of the lettuce wraps.
I took a little help from the store and bought already cut mango chunks and then diced them into smaller pieces.
Then mix everything together and taste for seasoning.
Add more kosher salt and pepper if needed.
Next up is making the lettuce wraps.
Separate the leaves from a head of boston lettuce and fill each lettuce wrap with some of the avocado chicken salad.
And top with more of the diced mango.

Avocado Chicken and Mango Lettuce Wraps
Avocado Chicken and Mango Lettuce Wraps are a light and refreshing meal, avocado chicken salad with mango served in a crisp lettuce wrap!
- 3 cups cooked, shredded chicken
- 1 large avocado
- 1 cup diced mango
- 1/2 cup chopped cilantro
- 2 Tbsps mayo (or nonfat Greek yogurt)
- 1 Tbsp lime juice
- kosher salt, pepper
- 1 head boston lettuce
In a large bowl combine chicken, avocado, 3/4 cup of the mango, cilantro, mayo, lime juice, kosher salt and pepper. Mix together and taste for seasoning. Add more kosher salt and pepper if needed.
Separate the boston lettuce into individual lettuce wraps. Fill the lettuce wraps with the avocado chicken salad and top with remaining diced mango.
