Healthy Homemade Chicken Salad
This Healthy Homemade Chicken Salad recipe will change your life if you’re a chicken salad junkie like me.
It uses NO MAYO and you seriously cannot even tell.
That’s thanks to my secret trick of adding dry ranch seasoning to non fat Greek yogurt.
My husband even tried some, not knowing about the yogurt, and was raving about how good it was 🙂
How to Make Healthy Homemade Chicken Salad
You can use any cooked, shredded chicken.
If you get a whole roasted chicken at the store, just shred it off the bone.
Or make this Chicken Salad for Meal Prep.
I keep this chicken on hand weekly in the fridge.
It’s great for adding to salads, wraps, or in this case…making chicken salad 🙂
You’ll need four cups cooked, shredded chicken, a red onion, celery, Greek yogurt, and the dry ranch seasoning.
Dice half of the onion and a few celery stalks.
I am not a fan of raw onions, so I cooked mine for a few minutes in a skillet with olive oil.
If you like raw onions, just skip this part.
Put everything in a bowl.
My chicken was already seasoned, so I didn’t add anything else.
If your chicken isn’t seasoned, you may want to add some salt and pepper.
Mix it all together and VOILA… it’s ready to enjoy!
Serve Healthy Chicken Salad in lettuce cups, as a wrap or sandwich, or with crackers 🙂
I kept this recipe fairly simple and classic.
You could mix it up by adding sweet relish, apples, walnuts, fresh herbs… the possibilities are endless really.
This will stay good in the fridge for a few days, if you have leftovers.

Healthy Homemade Chicken Salad
Healthy Homemade Chicken Salad is a classic, but uses Greek yogurt and no mayo to cut calories and added nutrition from the yogurt
Ingredients
- 4 cups cooked, shredded chicken
- 1/2 red onion
- 2 to 3 celery stalks
- 2 5.3 oz containers non fat plain Greek yogurt
- 1 1/2 Tbsps dry ranch seasoning
Instructions

Put the cooked, shredded chicken in a large bowl.

Dice the onion and celery.
Note: I cooked the onions in a skillet over medium heat for a few minutes with olive oil so they didn't have that raw onion taste, this step is optional.

Add the onion, celery, Greek yogurt, and dry ranch seasoning to the bowl with the chicken. Stir until evenly combined.

Store in the fridge and serve with crackers, lettuce, or as a sandwich or wrap.
