Crispy Coconut Chicken Tenders

Crispy Coconut Chicken Tenders are such an easy weeknight dinner recipe… baked in the oven so they’re pretty healthy, plus kid friendly as well!

We had fun setting out a bunch of dipping sauces to try with these at home baked chicken strips.

Baking them on a wire baking rack over a lined baking sheet helps with making them extra crisp.

But if you don’t have a wire rack it’s perfectly fine, just put them right on a baking sheet.

How to make Crispy Coconut Chicken Tenders

First I cracked two eggs in a bowl and beat them with a fork.

Then to another bowl add 1 1/4 cups sweetened coconut flakes, 1 cup panko bread crumbs, Old Bay seasoning, kosher salt, and pepper.

And give that a mix.

Then set up a breading station with the chicken tenders.

For those I just cut 2 pounds of chicken breasts into strips, or you could use actual chicken tenders from the store.

Dip each piece of chicken into the egg, then into the coconut breading, really pressing the breading into the chicken so it sticks well.

Place them on the wire rack over a lined baking sheet and sprinkle a little more kosher salt and pepper over top.

Finally, place them into a 400 degree oven for 25 to 30 minutes.

And use a spatula to gently remove them from the wire rack.

Ingredients

  • 2 eggs
  • 1 1/4 cups sweetened coconut flakes
  • 1 cup panko bread crumbs
  • kosher salt, pepper
  • 2 teaspoons Old Bay seasoning
  • 2 pounds boneless skinless chicken breasts cut into strips
  • dipping sauce of choice

Instructions

  1. Crack the eggs in a bowl and beat with a fork. Put the coconut flakes, panko, kosher salt, pepper, and Old Bay in another bowl and mix until combined.

  2. Dip each chicken strip into the egg and then into the coconut breading mixture, press the breading so it sticks well to the chicken (do this quickly so the breading in the bowl doesn't get soggy). Place the chicken on a wire rack over a lined baking sheet and season with a little more kosher salt and pepper.

    Note: If you don't have a wire rack just put them on a lined baking sheet.

  3. Bake in a 400 degree oven for 25 to 30 minutes. Serve with dipping sauce of choice (honey mustard, sweet Thai chili sauce, and yum yum sauce were our favorites).
