Air Fryer Balsamic Veggie Wraps
I’ve got a fabulous vegetarian recipe today, Air Fryer Balsamic Veggie Wraps are perfect for a Meatless Monday meal or anytime you are wanting to eat a little healthier.
This is an air fryer meal for two, or you can save one wrap and heat it up the next day for lunch.
It’s also low carb thanks to these Ole Extreme Wellness wraps!
How to make Air Fryer Balsamic Veggie Wraps
First put some sliced mushrooms, half of a sliced red onion, and a sliced red bell pepper into a bowl.
Then add some olive oil and balsamic vinegar.
And season with kosher salt, pepper, garlic powder, and dried oregano.
Toss until the veggies are evenly coated and put them in your air fryer basket.
Set the air fryer to 390 degrees for 14 to 16 minutes.
I gave mine a little toss halfway through cooking.
Now that the veggies are cooked we can make the wraps.
Lay a large soft tortilla or low carb wrap flat, then add some cheese of choice.
I went with a mix of mozzarella and goat cheese.
Then add the veggies and a drizzle of balsamic glaze.
The balsamic glaze is easily found in the vinegar section of the store, or you can order it from Amazon.
Roll the wraps and brush some olive oil on the outside.
Then set them in the air fryer, seam side down.
Give them about 3 to 5 minutes in the air fryer set to 390 degrees so the cheese melts and the tortilla gets slightly crisp.

Air Fryer Balsamic Veggie Wraps
Air Fryer Balsamic Veggie Wraps is an easy vegetarian recipe made with low carb tortillas, such a healthy lunch or dinner idea!
Ingredients
- 1 red bell pepper sliced
- 1/2 red onion sliced
- 8 ounces sliced mushrooms
- 2 tablespoons balsamic vinegar
- 2 tablespoons olive oil (plus more to brush on the wraps)
- 1 tablespoon dried oregano
- 1/2 tablespoon garlic powder
- kosher salt, pepper
- 2 large soft tortilla wraps (I used Ole Extreme Wellness)
- cheese of choice (I used a mix of goat cheese and mozzarella)
- balsamic glaze (vinegar section of grocery store)
Instructions

Put the bell pepper slices, onions, and mushrooms in a bowl. Add the balsamic vinegar, olive oil, oregano, garlic powder, kosher salt, and pepper. Toss until combined and put the seasoned veggies in the air fryer.

Set the air fryer to 390 degrees for 14 to 16 minutes. Let the veggies cool slightly and remove from the air fryer, wipe the air fryer basket clean.

Put some cheese of choice in the center of each tortilla wrap, the veggies, and a drizzle of balsamic glaze. Fold the sides in and roll into a wrap.

Brush the wraps with olive oil, place back into the air fryer seam side down. Set the air fryer to 390 degrees for 3 to 5 minutes or until they are crisped how your prefer.
