Veggie Hummus Tacos

I never stopped dreaming of the tacos my daughter made so I tried to recreate them, here is my recipe version of Veggie Hummus Tacos 🙂

This recipe is inspired by my oldest daughter, who came over one day to make her ole momma some dinner.

She made veggie tacos and they were so good!

How to make Veggie Hummus Tacos

The veggies I used were sweet potato, zucchini, red pepper, red onion, mushrooms, and kale.

Honestly I wanted to put radish in these but the store was out of radishes (kind of a random thing to be out of, but whatever…).

I had some extra kale at home so I used that.

The first step is dicing up the sweet potato and throwing that into a large skillet over medium heat with olive oil.

And season with kosher salt, pepper, and crushed red pepper flakes.

The sweet potato will cook for about 5 minutes first because it takes longer to cook sweet potatoes compared to the other veggies.

As the sweet potato cooks, dice up all of the other veggies.

Add everything except the kale, again the cook time is different.

So I am timing according to that so everything is cooked perfectly at the end.

Also, seasoning in layers, add more olive oil, kosher salt, pepper, as well as chili powder, paprika, and cumin.

About 7 to 8 minutes, stirring as it cooks and these will be ready 🙂

Then add the kale and garlic and cook a few more minutes.

The kale will cook down A LOT!

Once the veggies are done add fresh lemon juice and taste for seasoning.

Add more if needed and then you are ready to assemble the Veggie Hummus Tacos.

I used low carb street taco size tortillas for this dish.

Pile as many veggies as you can fit in your tortilla, top with hummus, and crumbled feta cheese.

Because everything is betta with feta of course 😉

Make it your own by adding anything else you prefer, such as cilantro, hot sauce, jalapenos…

Whatever taco toppings you like.

Veggie Hummus Tacos are a gorgeous, healthy, and delicious mix of fresh veggies served in low carb tortillas with hummus and feta cheese

Ingredients

  • 2 tablespoons olive oil
  • 1 sweet potato diced into half inch cubes
  • kosher salt, pepper, crushed red pepper flakes
  • 1 red onion diced
  • 1 red bell pepper diced
  • 1 zucchini diced
  • 8 ounces mushrooms diced
  • 1 teaspoon chili powder
  • 1 teaspoon paprika
  • 1/2 teaspoon cumin
  • 6 cloves garlic minced
  • 1 bunch kale stems removed and chopped
  • 1 to 2 tablespoons fresh lemon juice (more lemon wedges on the side if desired)
  • 12 street taco size tortilla (I used low carb)
  • 8 ounces hummus
  • 6 ounces crumbled feta cheese

Instructions

  1. Set a large skillet over medium heat and add 1 Tbsp of the olive oil. Once the oil is hot add the sweet potato, kosher salt, pepper, and crushed red pepper flakes. Cook 5 minutes, stirring occasioanlly.

  2. Add the remaining 1 Tbsp olive oil, diced red onions, bell peppers, zucchini, mushrooms, chili powder, paprika, cumin, and more kosher salt and pepper. Cook 7 to 8 minutes, stirring occasionally.

  3. Add the garlic and kale. Cook 3 to 4 more minutes, the kale will wilt down as it cooks. Add the lemon juice and stir until evenly mixed. Taste for seasoning and add more kosher salt, pepper, or crushed red pepper flakes if needed.

  4. Serve the veggies in warm tortillas and top with hummus and feta cheese, and more lemon wedges on the side if desired.
