Veggie Hummus Tacos are a gorgeous, healthy, and delicious mix of fresh veggies served in low carb tortillas with hummus and feta cheese
Set a large skillet over medium heat and add 1 Tbsp of the olive oil. Once the oil is hot add the sweet potato, kosher salt, pepper, and crushed red pepper flakes. Cook 5 minutes, stirring occasioanlly.
Add the remaining 1 Tbsp olive oil, diced red onions, bell peppers, zucchini, mushrooms, chili powder, paprika, cumin, and more kosher salt and pepper. Cook 7 to 8 minutes, stirring occasionally.
Add the garlic and kale. Cook 3 to 4 more minutes, the kale will wilt down as it cooks. Add the lemon juice and stir until evenly mixed. Taste for seasoning and add more kosher salt, pepper, or crushed red pepper flakes if needed.
Serve the veggies in warm tortillas and top with hummus and feta cheese, and more lemon wedges on the side if desired.
