Mediterranean Quesadillas

These Mediterranean Quesadillas were an easy vegetarian/ meatless dinner recipe that I threw together one day out of leftovers.

There was show on years ago on Food Network called Doorknock Dinners.

The guy would randomly show up at a house and make a fabulous dinner with whatever the people already had.

I seriously could do that gig because I love the challenge of coming up with creative ways to use leftovers.

Sorry…squirrel moment…back to these cheesy and delicious Mediterranean Quesadillas đŸ™‚

I had some tortillas, half a jar of sun dried tomatoes packed in oil, some pesto, mozzarella and feta cheese.

Yes, all leftovers from other dishes this past week.

How to Make Mediterranean Quesadillas

In my large skillet over medium heat I poured some of the sun dried tomato oil straight from the jar.

Then lay a large tortilla flat.

On one side of the tortilla I piled on some pesto, both cheeses, and sliced sun dried tomatoes.

Mediterranean Quesadillas

Next just fold the empty side of the tortilla over top of the side with the yumminess.

Let this cook a few minutes.

Then carefully flip and let the other side cook for a few minutes.

The quesadillas could also be made in the oven or even if you have one of those fancy quesadilla makers.

I have used those quesadilla makers before, but I find I can never fit in enough filling.

Maybe I’m just a piggie who likes a super stuffed quesadilla…if so, I’m okay with that đŸ˜‰

Mediterranean Quesadillas

Just slice up Mediterranean Quesadillas and serve đŸ™‚

This version is vegetarian, but you could add some chicken or shrimp to add a little protein if you’d like đŸ™‚

And you could easily make these on the Blackstone Griddle or Flat Top Grill over medium to medium low heat,

Mediterranean Quesadillas

Yummy Mediterranean ingredients in a crisp and delicious quesadilla

Ingredients

  • 4 burrito size tortillas
  • 1 4 oz jar sun dried tomatoes packed in oil
  • 1/2 cup pesto
  • 12 slices mozzarella or provolone cheese
  • 1 4 oz container crumbled feta cheese

Instructions

  1. In a large skillet over medium heat (or Blackstone griddle preheated to medium/ medium low), pour 1/2 Tbsp of the sun dried tomato oil. Spread evenly with a spatula. Lay a tortilla flat in the skillet.

  2. On one side of the tortilla spread some pesto, lay 3 slices of cheese, some of the feta, and some of the sun dried tomato slices. Fold the empty side of the tortilla over the side with the filling. Let cook for 1-2 minutes, then flip and let cook 1-2 more minutes.

  3. Remove from pan (or griddle) and repeat with the remaining ingredients. Makes 4 quesadillas.

    Note: On the Blackstone griddle or flat top grill you can make all four quesadillas at once.
