This dish is such a quick and easy weeknight dinner recipe, but it also doubles as a fun appetizer or snacky snack weekend dinner. Cheesy Chicken Pesto Roll Ups are a favorite with my kids as well.
Which it’s always a plus making a dinner that no one complains about.
We make homemade pesto each year at the end of summer and freeze it to use throughout the year.
But store bought pesto would work too.
This is my daughter and I making it together with all the fresh basil we grew together in our garden.

Simple ingredients are just shredded leftover chicken or rotisserie chicken from the store.
Ours was from Sweet Tea Brined Chicken this time combined with some pesto.
How to Make Cheesy Chicken Pesto Roll Ups
An 8 oz package of smoked provolone cheese, which is exactly 8 slices that I cut in half, and 2 packs of crescent rolls.
I layed the crescent roll triangles out on a cutting board, placed a half slice of cheese on top.
Then rolled them up with some of the pesto chicken in the middle.

The roll ups go on 2 lined baking sheets, and they would be great baked just as they are.
I did make a garlic parmesan butter to brush on top, just because sometimes I like to be a little “extra”, as my teens call it ;)…
That’s a compliment, right?! 😉

Place the baking sheets in a 375 degree oven for 12-15 minutes.

They come out looking golden and scrumptious!

Serve the chicken and pesto roll ups with some pizza sauce for dipping and enjoy!

Cheesy Chicken Pesto Roll Ups
A fun, simple, and yummy appetizer or meal!
Ingredients
- 2 cups cooked, shredded chicken
- 1/2 cup pesto
- 2 packages crescent rolls
- 8 oz smoked provolone cheese (8 slices)
- 3 Tbsps butter
- 3 cloves garlic minced
- 1 Tbsp grated parmesan
- kosher salt, pepper
- 1 cup pizza sauce
Instructions

Mix the chicken and pesto together.

Lay the crescent roll triangles flat on a cutting board. Cut the cheese slices in half. Place 1/2 of a cheese slice and some chicken with the pesto on top of the cheese. Roll up and place on a lined baking sheet. (Note: you will most likely need 2 baking sheets for 16 roll ups).

Melt the butter in a small bowl. Mix in the minced garlic and grated parmesan cheese along with some kosher salt and pepper. Brush the butter mixture over top of the roll ups.

Place the baking sheets in a 375 degree oven for 12-15 minutes. Serve with pizza sauce for dipping.
