Air Fryer Catfish with Corn Avocado Relish
Air Fryer Catfish with Corn Avocado Relish was a stress free, delicious, and healthy dinner recipe that we all loved!
My original plan for this dinner was to pan fry the catfish, which is sometimes a messy job because catfish can be delicate.
It hit me that this would be so much easier in the air fryer!
How to Make Air Fryer Catfish with Corn Avocado Relish
I seasoned the catfish fillets with cajun seasoning on both sides, being careful not to over season because it had salt in it.
I feel like I always over salt fish for some reason, so I’m extra careful.
Into the air fryer basket this goes with some olive oil cooking spray on top (I also sprayed the basket before the fish went in).
Depending on the size of your air fryer you may need to do two separate batches.
While the fish cooked at 400 degrees for 12 minutes, I made the corn avocado relish.
Helpful hint: You don’t want to cut the avocado to far in advance because it will brown.
The lime juice does help prevent browning a little.
A diced avocado, a cup of canned corn, a minced jalapeno, lime juice, and honey gets mixed together.
Season with kosher salt, pepper, and some crushed red pepper if you like a little heat.
The kids ate their air fryer catfish with no relish, so I served the rest of the canned corn to them as a side.
Look at me, being all resourceful 😉
Our fish was pretty thin so 12 minutes was perfect!
Feel free to add on an extra few minutes if you have a thicker fish.
Top air fryer catfish with the gorgeous corn avocado relish and you have a super healthy and delicious dinner that you can be proud of 🙂
