Fish Taco Cauliflower Rice Bowls

Fish Taco Cauliflower Rice Bowls are a super healthy recipe, low on calories and carbs, but most important…they are AMAZINGLY delicious!

I’m trying real hard to get super creative with some light and healthy meal recipes that, well…don’t taste like light and healthy meals.

This one is for sure a winner!

How to Make Fish Taco Cauliflower Rice Bowls

I seasoned some catfish fillets with chili powder, paprika, and cumin because they seemed like good taco-ish seasonings.

You could fry these in a skillet with a little olive oil, or into the air fryer (which is what I did).

Set the air fryer to 400 degrees for about 12 minutes.

As the fish cooked I microwaved the cauliflower rice and then tossed it with some lime juice and cilantro.

The lime and cilantro add just a little extra hint of flavor to this gorgeous dish.

The rice goes into a bowl and then place the fish on top.

A sliced avocado, more cilantro and lime, along with some Sweet Pickled Red Onions also go on top.

These onions are good on so many wraps, salads, tacos, and nachos and they keep in the fridge for a few months.

The sauce is just a mixture of reduced fat sour cream and Sriracha.

It gets drizzled over top of all this yumminess and you have a gorgeous and healthy meal!

Confession: I kept adding more and more of the sauce to my Fish Taco Cauliflower Rice Bowl because it was so addicting.

My husband just wasn’t feeling the cauliflower rice tonight.

So I just put his in a soft tortilla instead of the cauliflower rice…called it a regular fish taco, and we were all happy!

I thought I would share this idea just in case your family feels the same way.

It’s an easy fix for everyone being happy 🙂

Fish Taco Cauliflower Rice Bowls

Ingredients

  • 1 pound fish of choice (I used catfish) cut into strips
  • 1 tsp chili powder
  • 1/2 tsp paprika
  • 1/2 tsp cumin
  • kosher salt, pepper to taste
  • 1 14 oz bag cauliflower rice
  • 1 Tbsp lime juice
  • 1/4 cup chopped cilantro
  • 1 avocado sliced
  • 1/4 cup pickled red onions (store bought or recipe link in post above)
  • 1/4 cup reduced fat sour cream
  • 1 Tbsp Sriracha

Instructions

  1. Sprinkle both sides of the fish with chili powder, paprika, cumin, kosher salt, and pepper. Place the fish in the air fryer basket for 12 minutes set to 400 degrees (or in a skillet over medium heat with 1 Tbsp olive oil for 3-4 minutes per side).

  2. Cook the cauliflower rice bag in the microwave according to the package directions. Once cooked add the lime juice and cilantro. Toss until evenly mixed.

  3. Divide the cauliflower rice evenly between two bowls. Top each bowl with the fish, diced avocado, pickled red onions.

  4. Mix the sour cream together with the Sriracha and drizzle over top of each fish taco bowl.

    Note: These could also be served as a taco instead of over cauliflower rice, just put the fish and toppings in a soft flour tortilla and top with cilantro, lime juice, pickled peppers, and avocado with the Sriracha sour cream drizzled over top.
