Chicken Parmesan Meatballs
So I’m not usually a huge fan of meatballs, but for some reason these Chicken Parmesan Meatballs are one of my favorite recipes.
They are super easy to make, full of flavor, and they are extra delicious when served with garlic bread.
My whole family absolutely loves them as well đŸ™‚
Bonus mom points for making everyone happy at dinner, right?!
This is how to make the Chicken Parmesan Meatballs…
In a bowl combine a diced, cooked onion, ground chicken, Italian bread crumbs, an egg, parmesan cheese, garlic, salt, and pepper.
Mix this together with your hands and form 8 meatballs.
I will make the meatballs many times the night before so dinner when I get home from work is a little easier to prepare.
Once you form the meatballs with your hands, place them in a casserole dish.
These meatballs are a little bigger than most meatballs you would have.
This is the main dish right here, so I wanted them to be nice and big.
And it’s perfectly fine if they are touching slightly.
The meatballs bake in a casserole dish at 400 degrees for 30 minutes.
Then just add a jar of tomato pasta sauce and some fresh mozzarella cheese.
They go back into the oven (still set at 400 degrees) for another 10-15 minutes.
Just enough time for the sauce to get warm and bubbly and the cheese to melt to ooey gooey perfection.
I love a little fresh basil over top, plus it looks so pretty!
Highly recommended to serve these Chicken Parmesan Meatballs with garlic bread or garlic toast.

Chicken Parmesan Meatballs
Homemade chicken meatballs baked in marinara sauce and topped with lots of cheesy goodness
Ingredients
- 1 onion diced
- 1/2 Tbsp olive oil
- 1 pound ground chicken
- 1/2 cup Italian bread crumbs
- 4-5 cloves garlic minced
- 1 egg
- 1/4 cup grated parmesan cheese
- 1/2 Tbsp kosher salt
- 1 tsp pepper
- 1 24 oz jar tomato pasta sauce
- 4 oz fresh mozzarella cheese sliced
- Optional: fresh basil for garnish
Instructions

In a small skillet over medium heat add the olive oil and diced onion. Cook 4-5 minutes.

In a bowl add the cooked onion, ground chicken, bread crumbs, garlic, egg, parmesan cheese, kosher salt, and pepper. Mix together with your hands until evenly combined. Roll 8 meatballs with your hands and place in a casserole dish.
Note: Meatballs can be made a day ahead and stored in the fridge until ready to cook.

Bake at 400 degrees for 30 minutes. Add the tomato pasta sauce and top each meatball with a slice of fresh mozzarella cheese. Bake an additional 10-15 minutes.

Top with fresh basil if desired. Serve with garlic bread.
