This recipe for Air Fryer Corn and Jalapeno Fritters turned out even better than I imagined!

When fresh summer corn is in season I like to use it as many ways as possible.

Don’t get me wrong, just on the cob with butter and salt is a simple favorite, but getting creative with food is my passion.

So I was thrilled when these

These would be great as a snack or even as a side to with dinner.

How to Make Air Fryer Corn and Jalapeno Fritters

Start by cutting the kernels off four ears of corn on the cob.

I LOVE my corn scraper for this job!

Then dice two jalapenos.

It’s up to you if you want to include a few seeds for some heat, or remove all seeds and white ribs to keep this more mild in flavor.

To the bowl with the corn and diced jalapenos add in flour, cornmeal, Old Bay seasoning, kosher salt, pepper, and an egg.

Stir until evenly mixed and let this sit for a few minutes.

It makes it a little easier to roll the fritters.

While this rests you could make the dipping sauce.

In a bowl whisk together mayo, garlic, Old Bay, and lemon juice.

This dipping sauce pairs perfectly with the fritters đŸ™‚

Roll the corn mixture into bite size pieces, just about the size of a hushpuppy.

This batter is very delicate and falls apart easily, so I recommend rolling it with your hand and placing it right into the air fryer basket.

I wanted the corn to be the star of the show here and not a real thick batter.

Once they cook they hold together perfectly.

Set the air fryer to 370 degrees for 12 minutes and they come out gorgeous and golden brown!

Let them cool slightly and serve Air Fryer Corn and Jalapeno Fritters with the Old Bay dipping sauce.

I love breaking them into smaller pieces, makes them more dippable đŸ™‚

We were lucky enough to have a few leftovers.

Air Fryer Corn and Jalapeno Fritters are a fresh and delicious side dish or snack, perfect for fresh summer corn and dipped in Old Bay aioli!

Ingredients

  • 4 ears corn on the cob
  • 2 jalapenos seeds removed and diced
  • 1/2 cup cornmeal
  • 1/2 cup flour
  • 1 egg
  • 1 Tbsp Old Bay seasoning
  • kosher salt, pepper
  • 1/2 cup mayo
  • 1/2 Tbsp garlic paste or minced garlic
  • 1/2 Tbsp lemon juice

Instructions

  1. Cut the kernels off of the corn on the cob.

  2. Put the corn kernels in a bowl and add the diced jalapenos, cornmeal, flour, egg, 1/2 Tbsp of the Old Bay, kosher salt, and pepper. Stir until evenly combined and let this sit for 5 minutes before making the fritters.

  3. Use your hands to form the fritters (about the size of a hushpuppy) and place directly in the air fryer basket. Set the air fryer to 370 degrees for 12 minutes. (May need to be cooked in two batches depending on air fryer size)

    Note: They will be very delicate and not hold together well until they are cooked, so putting them right into the air fryer basket is highly recommended.

  4. While the fritters cook in the air fryer put the mayo, garlic, lemon juice, and remaining 1/2 Tbsp Old Bay in a bowl and stir until evenly mixed.

  5. Serve the fritters with the Old Bay dipping sauce.
