
BBQ Pork Tater Tot Casserole
BBQ Pork Tater Tot Casserole is such an easy dinner recipe, and the perfect way to use up leftover pulled pork (or chicken).
It’s definitely not diet food with the cheesy goodness and tater tot topping, but it sure is great for a splurge meal 🙂

How to make BBQ Pork Tater Tot Casserole
I had some leftover BBQ pulled pork that I smoked and stored in the freezer for an occasion just like this.
First put 2 cups of leftover pulled pork (or chicken) that has been mixed with BBQ sauce into a bowl.
Then add a block of cream cheese (at room temperature), 2 cups shredded cheese, and a can of diced green chiles or jalapenos.

Then season with kosher salt, pepper, and BBQ seasoning.
And mix until combined.
It does take a minute or two to come together.

Next add this mixture to a greased 9×13 casserole dish and spread it flat.
And place a single layer of frozen tater tots over top.

Finally, season with more BBQ seasoning.
And bake in a 400 degree oven for 30 to 40 minutes.

Garnish BBQ Pork Tater Tot Casserole with green onions if desired 🙂

Serve right away for the crispy tater tots, if it sits the tots will lose their crispiness… but leftovers are still darn yummy!

We also added more BBQ sauce and a little hot sauce.

BBQ Pork Tater Tot Casserole
BBQ Pork Tater Tot Casserole is a great, easy recipe to use leftover pulled pork, only a few ingredients for a spectacular dinner casserole!
Ingredients
- 2 cups leftover pulled pork (or chicken) mixed with BBQ sauce
- 1 8 ounce block cream cheese at room temperature
- 2 cups shredded cheese of choice (I used Monterey Jack)
- 1 4 ounce can diced green chiles or jalapenos
- kosher salt, pepper, BBQ seasoning
- 1 30 ounce bag frozen tater tots (you may not use the entire bag)
- Optional: green onions, more BBQ sauce, hot sauce
Instructions

Put the pulled pork or chicken in BBQ sauce, cream cheese, shredded cheese, green chiles or jalapenos, kosher salt, pepper, and BBQ seasoning in a bowl. Stir until combined, which does take a minute or two.

Put this mixture in a greased 9×13 casserole dish and spread flat. Add the frozen tater tots on top in a single layer and season with more BBQ seasoning.

Bake in a 400 degree oven for 30 to 40 minutes. Garnish with green onions and serve with more BBQ sauce or hot sauce if desired.
Note: The tots will be crisp on top at first, but lose their crispiness if not served right away.
