Slow Cooker Jalapeno Cranberry Pork
We all could use some simple Crock Pot recipes with just a few ingredients, so that’s why I am sharing with you Slow Cooker Jalapeno Cranberry Pork.
You can slice it up or shred it to enjoy some sweet and spicy BBQ pulled pork.
We enjoyed some of it one night for dinner, had some leftover BBQ pulled pork sandwiches for lunch.
And I froze the rest for another day 🙂
How to make Slow Cooker Jalapeno Cranberry Pork
First put two pounds of pork in the Crock Pot Slow Cooker.
I used two pork tenderloins, but pork chops work too!
Season the pork with kosher salt, pepper, and your favorite BBQ seasoning blend.
Then spoon a can of cranberry sauce over top.
Next add a can of diced jalapenos.
And if you don’t love a lot of spice, just add half of the can.
Lastly, drizzle a bottle of your favorite BBQ sauce over top.
The set the slow cooker to low for 6 to 8 hours.
We need to thicken the BBQ sauce slightly, so we will add what is called a cornstarch slurry.
Simply mix together a tablespoon of cornstarch with 1/4 cup water.
Add this to the sauce and mix it in.
Finally turn the Crock Pot to high for 30 minutes and the sauce will thicken a bit.
So from here you can slice it up and serve.
Or use two forks to shred it in the slow cooker and serve more as BBQ pulled pork.
Slow Cooker Jalapeno Cranberry Pork is the perfect mix of sweet and spicy 🙂
It still has BBQ vibes, but with a little something special thanks to the cranberry and jalapeno.
And bonus pints to this recipe being ridiculously simple and easy to prepare!
