Slow Cooker Garlic Stuffed Pork Loin

Slow Cooker Garlic Stuffed Pork Loin is an incredible recipe, easy to make, and you can mix it up with SO many different types of seasonings and flavors.

And entire head of garlic will go into this 3 to 4 pound half pork loin (not pork tenderloin).

The garlic flavor is not overwhelming, as the garlic kind of melts into the pork as it slow cooks for hours.

I used an all purpose seasoning with course bits of garlic, peppercorns, onion, thyme, and parsley.

How to Make Slow Cooker Garlic Stuffed Pork Loin

All you need to begin is a half pork loin and a head of garlic.

Separate the cloves from the head of garlic and peel the skins.

I smash them with the flat side of the knife to make the skin easier to peel.

Then cut each clove into smaller pieces to make them more…. ummmm… stuffable đŸ˜‰

Place the pork loin in the slow cooker/ Crock Pot.

Then pierce some holes using a knife for the garlic.

Get yourself an adorable kitchen buddy like my grandson who LOVES cooking with GiGi đŸ™‚

He handed me the garlic and I did the stuffing part.

Just place half of the garlic on the first side of the pork.

Then a drizzle of olive oil, kosher salt, pepper, and whatever seasoning blend you are using.

This sweet boy did a great job seasoning the first side.

Flip the pork over and stuff the other side with the rest of the garlic.

A drizzle of olive oil on this side and more kosher salt, pepper, and your seasoning blend.

Turn the slow cooker on low for 7 to 8 hours.

No need for any liquid or anything else, just let it go for the day đŸ™‚

This sauce is optional, but OH so yummy.

It’s a dijon cream sauce that you could serve with any chicken, steak, or another cut of pork too.

How to make the sauce for Slow Cooker Garlic Pork Loin

First set a skillet over medium heat and once hot, add two Tablespoons butter.

After the butter melts add minced garlic or garlic paste and cook for about a minute.

Next add a cup of heavy cream, a cup of chicken broth, dijon mustard, and parsley (or another herb such as rosemary or thyme).

Then bring this to a boil and then reduce the heat to simmer for 4 to 5 minutes.

Let me just prepare you, the aroma in your kitchen is going to be incredible!

This will shred with just two fork if your are going for pulled or shredded pork.

I chose to slice my Slow Cooker Garlic Stuffed Pork Loin with Dijon Cream Sauce

If you shred yours it’s great on a sandwich or wrap, you could even add your favorite store bought sauce if you don’t make the cream sauce.

We enjoyed half of this sliced up and I shredded the other half to make Cheesy Cuban Casserole.

Ingredients

Slow Cooker Garlic Stuffed Pork Loin

  • 1 whole head of garlic
  • 1 3 to 4 pound pork boneless half loin (not pork tenderloin)
  • olive oil, kosher salt, pepper, seasoning blend of choice/ all purpose seasoning blend

Dijon Cream Sauce (Optional)

  • 2 Tbsps butter
  • 1 Tbsp garlic paste or minced garlic
  • 1 cup heavy cream
  • 1 cup chicken broth
  • 2 Tbsps dijon mustard
  • 1 Tbsp parsley (I used dried, or you can use any herb of choice either dried or fresh)
  • kosher salt, pepper

Instructions

Slow Cooker Garlic Stuffed Pork Loin

  1. Separate the garlic cloves from the head of garlic, smash each with the flat side of a knife (this makes them easier to peel), and peel the skin from each. Cut each clove into 2 to 4 smaller pieces.

  2. Put the pork loin in a slow cooker and use a knife to pierce through several times to make holes for the garlic. Stuff half of the garlic pieces into the pork.

  3. Drizzle olive oil over top and season with kosher salt, pepper, and seasoning blend of choice. Flip the pork over and repeat stuffing the remaining garlic on the other side, drizzle with more olive oil, kosher salt, pepper, and season blend of choice.

  4. Turn the slow cooker on low for 7 to 8 hours.

  5. Slice or shred the pork, serve with Dijon Cream Sauce if desired.

    Note: Calorie count in recipe card is pork only, cream sauce will add an additional 165 calories.

Dijon Cream Sauce (Optional)

  1. Set a skillet over medium heat and once hot add the butter. When the butter is melted add the garlic and cook for 1 minute.

  2. Add the heavy cream, chicken broth, dijon mustard, parsley (or herb of choice), kosher salt, and pepper.

  3. Once this starts to bubble, cook 4 to 6 minutes, stirring a few times. If it looks like it will bubble over, reduce the heat slightly.

    Note: It will thicken slightly as it cools.
