Salmon Salad with Lemon Vinaigrette

Salmon Salad with Lemon Vinaigrette could very well be called “The Ultimate Superfood Salad Recipe”.

With ingredients like dark, leafy greens, salmon, avocado, walnuts, and a healthy homemade dressing it’s very healthy.

But doesn’t have that deprived healthy feel, like you’re missing out on something.

I made Shrimp Pesto Lasagna Roll Ups the other day, so I really needed a healthy salad in my life.

It’s all about balance and eating in moderation, my friends 🙂

How to Make Salmon Salad with Lemon Vinaigrette

Start by seasoning the salmon fillets.

I brushed each with olive oil and seasoned with an all purpose seasoning blend.

You could stick with just the salt and pepper, or use your favorite seasoning blend.

Cook the salmon in the air fryer or oven, either would be at 400 degrees for 8 to 10 minutes.

While the salmon is cooking, make the lemon vinaigrette.

I made mine in a mason jar, or you could use a container with a lid.

Add 1/2 cup olive oil and 1/4 cup lemon juice (this was just about a whole lemon for me).

Then a Tablespoon dijon mustard to emulsify the dressing, meaning when you shake it the dressing will come together and not separate.

Also some honey for sweetness, kosher salt, pepper, and a Tablespoon grated ginger.

I used a microplane grater for my fresh ginger.

Or you could use ginger paste, found in the fresh herb section of the grocery store.

Put the lid on and give a shake to create this gorgeous, bright dressing.

Taste for seasoning and add more honey, ginger, kosher salt, or pepper if needed.

And now we build the salads!

Start with spring mix or field greens in a bowl.

And add the salmon that has been cooled slightly along with diced avocado and walnuts.

Ingredients

Salmon Salad

  • 4 salmon fillets
  • olive oil, kosher salt, pepper, Optional: seasoning blend of choice
  • 6 cups field greens or spring mix salad blend
  • 1 large avocado diced
  • 3/4 cup walnuts

Lemon Vinaigrette

  • 1/2 cup olive oil
  • 1/4 cup lemon juice
  • 1 Tbsp honey
  • 1 Tbsp dijon mustard
  • 2 tsp grated ginger or ginger paste
  • kosher salt, pepper

Instructions

Salmon Salad

  1. Brush the salmon fillets with olive oil and season with kosher salt and pepper, and a seasoning blend of choice if desired.

  2. Cook the salmon in the air fryer at 400 degrees for 8 to 10 minutes or place on a baking sheet and bake in a 400 degree oven for 8 to 10 minutes. Let the salmon cool.

    Note: I made the dressing as the salmon cooled.

  3. Divide the lettuce mix between four plates or bowls. Top each with a piece of salmon, walnuts, avocado, and serve with the Lemon Vinaigrette.

Lemon Vinaigrette

  1. Put all ingredients for the vinaigrette in a mason jar or container with a lid. Shake until the dressing is combined. Taste for seasoning and add more kosher salt, pepper, honey. and/ or ginger if desired.

  2. Store any leftovers in a sealed container in the fridge for a few days.
