Teriyaki Salmon and Veggies
My family had all smiles though as I served this (gorgeous) Teriyaki Salmon and Veggies recipe for a healthy one pan dinner.
I do believe I will forever be made fun of by my husband and daughter after making this dish.
They were watching TV and heard me in the kitchen when I opened the two pounds of salmon fillets that I ordered.
I yelled “Wow, this salmon is GORGEOUS!!!”….well they instantly started laughing.
My husband was like “Really?! How gorgeous is it?!” and my daughter “Is it the most GORGEOUS salmon ever?!”
Yeah, yeah, I am aware of my weirdness and can take a little sarcasm 😉
How to Make Teriyaki Salmon and Veggies
I am a mother of four and full time second grade teacher, therefore I am VERY much a home cook.
Meaning I take shortcuts when possible to make dinnertime a bit easier and less stressful.
Therefore I chose to use a bottle of Kikkoman Teriyaki sauce rather than making my own.
I do like the Kikkoman brand because it has no high fructose corn syrup.
Some of the teriyaki sauce goes into a shallow dish.
And then place the salmon fillets skin side up for about 30 minutes.
As the salmon marinates you can dice up the veggies.
This is a red bell pepper, yellow bell pepper, and a red onion cut into inch size pieces.
A head of broccoli cut into similar size florets and a peeled carrot cut into 1/4 inch slices.
Toss the veggies with some garlic powder, crushed red pepper flakes, and more teriyaki sauce on a lined baking sheet.
Then move the veggies to the outer edges to make room for the (gorgeous 😉 ) salmon.
Arrange the veggies around the salmon, pour the remaining marinade over the salmon, and we are ready for the oven.
Into a 400 degree oven for 18 to 20 minutes is all it takes.
During the last two minutes turn the broiler on high to caramelize the teriyaki sauce on the salmon and veggies.

Sprinkle with sesame seeds and Teriyaki Salmon with Veggies is ready to be served!
We served ours over rice with some Sriracha (because we are spice freaks around here)!

Two pounds of salmon is more than enough for 6 people.
So since we only had 4 at dinner I meal prepped the rest.
A little brown rice in a container with some salmon and veggies makes for the perfect lunch or dinner on a busy night.

Teriyaki Salmon and Veggies
Teriyaki Salmon and Veggies is a one pan wonder of a meal, it's super simple, healthy, and delicious…also has a meal prep option!
Ingredients
- 1 cup teriyaki sauce (I used Kikkoman Teriyaki with no high fructose corn syrup)
- 2 pounds salmon (cut into fillets)
- 1 red bell pepper
- 1 yellow bell pepper
- 1 red onion
- 1 head broccoli
- 1 large carrot
- 1 tsp garlic powder
- 1/2 tsp crushed red pepper flakes
- Optional: sesame seeds for garnish, rice, Sriracha
Instructions

Pour 1/2 cup of the teriyaki sauce in a shallow dish and place the salmon fillets skin side up in the dish. Marinate for 30 minutes.

Cut the red bell pepper, yellow bell pepper, and red onion into 1 inch pieces. Trim the broccoli into similar size florets. Peel the carrot and cut into 1/4 inch slices.

Place all of the veggies on a large, lined baking sheet. Sprinkle the garlic powder and crushed red pepper flakes over top and drizzle the remaining 1/2 cup teriyaki sauce. Toss until evenly mixed.

Scoot the veggies to the outer edges of the baking sheet and place the salmon fillets in the center of the pan, pour the remaining marinade over the salmon. Arrange the veggies in a single layer around the salmon.

Bake in a 400 degree oven for 18 to 20 minutes, turn the broiler on high during the last two minutes.

Sprinkle with sesame seeds if desired, and serve as is or over rice with Sriracha if desired.
