Cilantro Lime Sweet Potato Rice
Cilantro Lime Sweet Potato Rice was the delicious recipe result of my friend’s challenge 🙂
According to my work bestie, sweet potato rice is quickly becoming a very popular side dish.
It was almost as if she was challenging me to see what creative spin I would put on it…she knows me VERY well!
I’ve done my fair share of cauliflower rice dishes such as Bang Bang Salmon with Cauliflower Rice and Steak Cauliflower Fried Rice, so I was excited to try out something new!
Bonus points to sweet potato rice for having lots of extra flavor, vitamins and fiber compared to cauliflower rice, and certainly far less calories than regular rice.
How to Make Cilantro Lime Sweet Potato Rice
First step is cutting the skin off of four sweet potatoes and cutting them into inch size cubes .
Then place half of the cubes in a food process and pulse about 10 times.
Remove and repeat with the second half.
I found with my size food processor it worked better doing the two smaller batches rather than one big batch.
It should have a rice like consistency just like this.
To cook this “rice” set a large skillet over medium heat and add some olive oil.
Once the oil is hot add the sweet potatoes.
The seasoning I went with was chili powder, garlic powder, cumin, kosher salt, and pepper.
Let this cook for 8 minutes, stirring occasionally.
Then add some freshly chopped cilantro and lime juice.
Stir it until evenly combined.
Cilantro Lime Sweet Potato Rice is that simple!
It’s a great side dish or you could use it as part of a rice bowl.
At first my husband was leary to try it, but even he ended up loving it!
I had some of this rice leftover and packed it with my lunch the next day and it reheated really well 🙂

Cilantro Lime Sweet Potato Rice
Cilantro Lime Sweet Potato Rice is a healthy and delicious alternative to regular rice with lots of vitamins, fiber, and fewer calories!
Ingredients
- 4 sweet potatoes medium size
- 2 Tbsps olive oil
- 1 tsp chili powder
- 1 tsp garlic powder
- 1 tsp cumin
- kosher salt, pepper
- 1/2 cup chopped cilantro leaves
- 1 to 2 Tbsps fresh lime juice
Instructions

Cut the sweet potatoes into inch cubes (remove the skin). Place the sweet potato cubes in a food processor and pulse about 10 times or until it becomes a "rice" consistency.
Note: This may need to be done in two separate batches depending on the size of your food processor.

Set a large skillet over medium heat and add the olive oil. Once the olive oil is hot add the sweet potato rice, chili powder, garlic powder, cumin, kosher salt, and pepper. Cook over medium heat for 8 minutes, stirring occasionally.

Stir in the chopped cilantro and lime juice and serve.
