Pork Carnitas Sheet Pan Nachos

I made a big crock pot full of these delicious Pork Carnitas recipe on the weekend, with the intention of using them throughout the week in a few dishes. That’s how these Pork Carnitas Sheet Pan Nachos began.

This way I really only had to cook once, because these nachos are so easy to prepare I would barely even call this cooking.

Crockpot Pork Carnitas

As much as I ate to admit, but this was actually our dinner.

I mean, who doesn’t love a good junk food dinner every once in awhile.

I didn’t even make my kids eat extra fruits or veggies (and I don’t feel one bit bad about it either đŸ™‚ )

Actually just threw everything on a baking sheet, baked for literally a minute, and put it right on the table.

This would also be a perfect appetizer for a party if you’re not one to have nachos for dinner.

How to Make Pork Carnitas Sheet Pan Nachos

Line a baking sheet with foil or parchment paper to make cleanup even easier.

Spread some tortilla chips in a single layer, top with the already cooked, waiting-for-you-in-the-fridge pork carnitas, and some shredded cheese.

I did warm the carnitas for a minute in the microwave because this only cooks for a minute in the oven.

I wanted to be sure they warmed through enough.

Place in the oven on the middle rack, turn the broiler on high for one minute, or until the cheese melts.

We love nachos topped with very thinly shredded lettuce, cilantro, jalapenos, and a Spicy Southwest Sour Cream drizzled right on top.

You could use regular sour cream, but if you want a spicy version just mix sour cream with hot sauce, lime juice. chili powder, and ground red pepper.

I didn’t make this one too spicy since the kids ate it also.

Ingredients

Carnitas Nachos

  • 1 bag tortilla chips
  • 2 cups shredded pork carnitas
  • 1 cup shredded cheese
  • Optional toppings: lettuce, cilantro, jalapenos, sour cream

Spicy Southwest Sour Cream

  • 4 oz sour cream
  • 1 oz hot sauce
  • juice of a lime wedge
  • chili powder, ground red pepper

Instructions

  1. Line a baking sheet with foil or parchment paper. Lay chips on the baking sheet in a single layer (you may have some chips leftover).

  2. Top with pork carnitas and cheese. Place the baking sheet on the middle rack of the oven, turn the broiler on high. Cook for 1 minute or until cheese is melted.

  3. If making the Spicy Southwest Sour Cream, in a bowl, combine sour cream, hot sauce, lime juice, and chili powder and Ground red pepper to taste.

  4. Top with shredded lettuce, cilantro, jalapenos, sour cream or Spicy Southwest Sour Cream if desired.
