
Pork Carnitas Tostadas
I made some pretty darn amazing Crockpot Pork Carnitas, so this recipe uses the leftover pork that we had to make Pork Carnitas Tostadas.
You could also use leftover Smoked BBQ Pork or Smoked Mexican Chicken.
How to Make Pork Carnitas Tostadas
I made my own crunchy tortillas for this tostada dish using street corn size corn tortillas.
Super easy and much fresher than the store bought ones. Just about 45 seconds on each side in some vegetable oil.
I filled my tiniest pan with about an inch of oil, set to medium heat, and after 4-5 minutes it’s the perfect temperature to fry the tortillas.
I did mine one at a time because my pan was so small.
After they are cooked, set on a paper towel to drain the excess oil.

Since I already had the carnitas prepared, it only took a few minutes to throw these together.
I used a can of refried beans, the carnitas, and a shredded mexican blend cheese.
Make sure the beans and carnitas are at least at room temperature, or slightly warm because this is only going to cook for about a minute under the broiler.
Spread the beans and the carnitas onto the tortillas on a lined baking sheet.
Just LOOK at that pork…

A little cheese on top…

And onto the middle rack of your oven with the broiler set to high.
Takes only about a minute to melt the cheese and Pork Carnitas Tostadas are done!

The kids ate theirs just like this, but I sprinkled mine and my husband’s with Cotija cheese, sour cream, and some jalapenos.

Pork Carnitas Tostadas
Crispy fried tortillas topped with homemade pork carnitas and cheese!
Ingredients
- 8 street corn size tacos (flour or corn)
- vegetable oil
- 1 15 oz can refried beans
- 3 cups leftover shredded pork carnitas or smoked pork
- 2 cups shredded cheese
- Optional toppings: Cotija cheese, sour cream, jalapenos
Instructions

In a small skillet over medium heat, fill with vegetable oil about 1 inch deep. After about 5 minutes the oil should be hot enough. Fry the tortillas one at a time about 45 seconds on each side until golden brown. Set aside on paper towel to drain.

Place tortillas on a lined baking sheet. Make sure refried beans and pork carnitas are at room temperature or slightly warm. Spread each tortilla with beans, top with pork and cheese.

Place the baking sheet on the middle rack of the oven. Turn broiler on high for one minute or until cheese is melted.

Serve right away. Top with Cotija cheese, jalapenos, or sour cream if desired.
