Spicy Korean Pork Rice Bowls
Spicy Korean Pork Rice Bowls was the answer to a dilemma, and oh my goodness, this unique recipe was so SO yummy!
Over the summer I am usually on quite the grilling kick.
I stumbled upon Gochujang Korean chili paste and instantly fell in love with the flavor.
After making a few recipes with it such as Korean Grilled Chicken and Grilled Korean Flank Steak, I had just a small amount left.
Hmmmmm…what to make…what to make?!
Here’s how to make Spicy Korean Pork Rice Bowls…
It starts in a large skillet over medium heat with some olive oil, diced red bell pepper, onion, and shredded carrot.
For the carrot I used a box grater, but you could also get pre shredded carrots at the grocery store.
The veggies cook for about 6 to 8 minutes until they are slightly soft, but not cooked all the way.
The next step is scooting all the yummy veggies to one side of the skillet to make room for the pork.
This is a pound a lean ground pork.
Ground chicken could certainly be used instead.
Along with the pork also add some soy sauce, Gochujang Korean chili paste, honey, garlic paste, and ginger paste.
I use garlic and ginger paste quite often, it’s so convenient in the tube and just as flavorful in my opinion.
This will cook around 10 to 12 minutes in the skillet over medium heat.
Use a spatula to break the pork apart as it cooks and mix it all together.
At this point taste for seasoning.
Everyone has different tastes, so add more soy sauce or Korean chili paste if needed.
For me it was perfect just like this 🙂
The sauce for these Spicy Korean Pork Rice Bowls was just mayo, Gochujang chili paste, and soy sauce whisked together.
Kind of like a Spicy Korean Mayo.
Serve over cooked rice or cauliflower rice and drizzle the sauce over top.
For these I used Uncle Ben’s Jasmine Ready Rice.
Just 90 seconds in the microwave and you have perfectly cooked, delicious rice!

Spicy Korean Pork Rice Bowls
Delicious pork and veggies served over rice with an amazing spicy mayo
Ingredients
Spicy Korean Pork Rice Bowls
- 1 Tbsp olive oil
- 1 red bell pepper diced
- 1 onion diced
- 1 large carrot shredded
- 1 pound lean ground pork
- 2 tablespoons soy sauce
- 1 to 3 tablespoons sriracha
- 1 1/2 tablespoons Gochujang Korean chili paste
- 1 1/2 tablespoons honey
- 1 tablespoons ginger paste or minced ginger
- 1 tablespoons garlic paste or minced garlic
- 4 cups cooked rice or cauliflower rice (I used Uncle Ben's Jasmine Ready Rice pouches for the microwave)
Spicy Korean Mayo
- 3/4 cup mayo or light mayo
- 1 tablespoon Gochujang Korean chili paste
- 1 tablespoon soy sauce
Instructions
Spicy Korean Pork Rice Bowls

In a large skillet over medium heat add the olive oil, diced red pepper, diced onion, and shredded carrot. Cook 6 to 8 minutes, stirring occasionally.

Move the veggies to one side of the skillet and add the pork to the empty side, add the soy sauce, sriracha, Gochujang chili paste, honey, ginger, and garlic. Cook 10 to 12 minutes, breaking apart the pork and stirring occasionally. Taste for seasoning and add more soy sauce or Gochujang chili paste if desired.

Serve over the cooked rice and with the Spicy Korean Mayo drizzled over top.

Mix all ingredients together in a bowl and serve drizzled over the Spicy Korean Pork Bowls.
