
Street Corn Cucumber Salad
Street Corn Cucumber Salad is another fun version of the viral cucumber salad recipe that is all the rage right now.
But here’s where things get interesting… I am using blended cottage cheese as the sauce in place of the traditional mayo/sour cream mixture.
I mean, do you trust me?!
It’s not only healthier, it’s sooooooo flipping delicious!

How to make Street Corn Cucumber Salad
First put 1/2 cup cottage cheese into a blender or food processor.

Then blend until smooth, which does take about a minute.
Just set this mixture aside while you assemble the salad.

Next slice 5 mini cucumbers and put them into a large bowl.
Two English cucumbers would work too!

Then add a little over a cup of corn kernels… either canned or thawed frozen.
Honestly, I want to try this with fresh, grilled corn that has been cut off the cob.
But for a quick and easy meal, the canned corn did its job.

Fresh chopped cilantro and pickled red onions join this party next.

Finally, the blended cottage cheese, cotija cheese crumbles, kosher salt, pepper, and Tajin seasoning.

Simply mix this together and it’s ready to go!

Add more cotija, cilantro, and Tajin over top of Street Corn Cucumber Salad and enjoy!
This was our simple, healthy dinner for two.
But you could easily serve this at a party for a light and refreshing side.

I do recommend serving right away because the water from the cucumbers could make things messy.

Street Corn Cucumber Salad
Street Corn Cucumber Salad is a version of the viral TikTok cucumber salad recipe with Mexican street corn ingredients for a healthy meal!
Ingredients
- 1/2 cup cottage cheese (or equal mix of sour cream and mayo)
- 5 mini cucumbers sliced
- 1 1/4 cups canned or frozen (thawed) corn kernels
- 1 teaspoon Tajin (plus more to sprinkle over top)
- 1/3 cup chopped, fresh cilantro (plus more to sprinkle over top)
- 2 tablespoons cotija cheese (plus more to sprinkle over top)
- 1/4 cup pickled red onions
- kosher salt, pepper
Instructions

Put the cottage cheese in a blender or food processor. Blend until smooth, about 1 minute.

Put cucumbers, corn, Tajin, cilantro, cotija cheese, pickled red onions, kosher salt, pepper, and blended cottage cheese in a bowl. Stir until combined.

Divide between 2 plates or bowls. Top with more Tajin, cilantro, and cotija cheese. Serve right away.
