Blackstone Catfish with Corn Relish
If you’re looking for a fresh and healthy seafood dinner on the griddle, look no further than this Blackstone Catfish with Corn Relish recipe.
Corn on the cob with peppers, cilantro, and lime is the perfect topping for catfish or your fresh catch-of-the-day!
How to make Blackstone Catfish with Corn Relish
Start by patting the catfish fillets dry with paper towels and season lightly with any seasoning blend of choice.
You get to pick the flavor profile here with your seasoning blend… Old Bay, any Cajun or Fajita seasoning works but I’m sure a garlic and herb seasoning blend would be so good too.

Preheat your Blackstone or flat top griddle to medium heat.
Then add some cooking oil to the whole griddle, and to one side we will start the corn relish.
Add the corn kernels, red pepper, red onion, jalapeno, minced garlic, kosher salt, pepper, and more of your seasoning blend of choice.

And the catfish will go on the other side of the Blackstone.
Cook both for 8 to 9 minutes.
Mix the corn relish with spatulas a few times and flip the fish a few times.

Then add some fresh cilantro and lime juice to the corn.

Mix together and cook for another minute or two.

Serve Blackstone Catfish with Corn Relish with a lime wedge on the side 🙂
This corn relish would also be amazing served over griddled chicken or serve this in tortillas as catfish tacos.
