Ingredients
  • 4 cattish fillets
  • seasoning blend of choice (Old Bay, Cajun seasoning, or Fajita seasoning blend)
  • cooking oil of choice
  • 3 ears corn on the cob kernels cut off the cob
  • 1 red bell pepper diced
  • 1 small red onion diced
  • 1 jalapeno pepper diced
  • 4 cloves garlic minced
  • kosher salt, pepper
  • 1 cup chopped fresh cilantro
  • 1 lime cut into 6 wedges
Instructions
  1. Pat the fish fillets with paper towels and season lightly on both sides with seasoning blend of choice.

  2. Preheat griddle to medium heat. Add cooking oil of choice, corn, peppers, onion, jalapeno, garlic, kosher salt, pepper, and more seasoning blend of choice to one side of griddle and add the seasoned catfish to other side of griddle.

  3. Cook 8 to 9 minutes, mixing the corn relish a few times and flipping the catfish a few times.

  4. Add cilantro and squeeze 2 lime wedges on the corn relish, mix with spatulas and cook another 1 to 2 minutes. Serve catfish topped with the corn relish with a lime wedge to squeeze over top.
