Steak and Cherry Salad with Light Balsamic Dressing
My family looked at me a little funny when I told them we were having a steak and cherry salad recipe.
I am totally used to these odd looks though, some of the food combos I come up with are a little strange.
They were intrigued to say the least.
And almost seemed shocked when they tasted it and were wowed by the deliciousness of this crazy combo 🙂
Come on people…they should trust me and my weirdness by now!
How to make Steak and Cherry Salad
Before heading to the grill, I brushed olive oil and sprinkled salt and pepper on my steak.
This is a flank steak but any steak of your choice would work.
I also chopped my lettuce so it was all ready to go.
Throw the steak on a grill set to medium high heat.
About 3 to 5 minutes per side depending on the steak thickness and how you prefer your steak.

As the steak rests, prepare the light, homemade balsamic dressing.
Just three ingredients…light mayo, balsamic vinegar, and sugar.
Whisk it together and that’s it 🙂
Then divide the lettuce between four bowls or plates (or containers if meal prepping these).
And add slices of steak, blue cheese crumbles, glazed or candied walnuts, and sweet cherries with the pits removed.
I sliced around each pit, twisted one half off, and pulled out each pit from the other half.
A messy job, yes…but well worth it for this salad.
Just look at those gorgeous colors!
Drizzle the light balsamic dressing over top of the steak and cherry salad and dig in!
The sweetness from the cherries, crunch from the walnuts, saltiness of the blue cheese all paired with the steak is pure heaven!

Steak and Cherry Salad with Light Balsamic Dressing
Steak and Cherry Salad with Light Balsamic Dressing has grilled steak, sweet cherries, blue cheese, and glazed walnuts with a light homemade dressing
Ingredients
- 1 pound steak of choice (I used flank steak)
- olive oil, kosher salt, pepper
- 1 cup light mayo
- 2 Tbsps balsamic vinegar
- 1/2 Tbsp sugar
- 8 cups chopped lettuce of choice (I used romaine)
- 1 1/2 cups cherries cut in half, pits removed
- 4 oz glazed or candied walnuts
- 4 oz blue cheese crumbles
Instructions

Brush the steak with olive oil and sprinkle with kosher salt and pepper on both sides.

Preheat the grill to medium high heat and put the steak on the grill. Grill the steak 3 to 5 minutes per side, depending on steak thickness and how you like your steak cooked.

As the steak rests, make the dressing by whisking together in a bowl the light mayo, balsamic vinegar, and sugar.

Divide the lettuce evenly between 4 plates or bowls. Slice the steak against the grain and top each salad with some steak, cherries, glazed walnuts, and blue cheese. Top with the light balsamic dressing.
