T-Bone Steaks with Herb Butter

There’s not much better than a restaurant quality steak dinner at home. This T-Bone Steaks with Herb Butter recipe was perfect for our date night in last night.

A T-Bone really doesn’t need much other than kosher salt and pepper, but we did get slightly fancy with this garlic herb butter.

If you don’t have fresh herbs, I recommend using the Italian Herb seasoning at Savory Spice.

They are dried, but with high quality of all the Savory Spice products, they would be perfect for this butter.

How to Make T-Bone Steaks with Herb Butter

I am using fresh rosemary, thyme, and chives really just because that’s what I have growing in my garden.

Finely mince four cloves garlic and the herbs to start.

Put a stick of butter in a saucepan over medium heat.

Then add the garlic and herbs.

Cook the butter over medium heat just for a few minutes.

We want to cook the garlic slightly and let the herbs infuse into the butter making it super flavorful.

Put the butter in a container and place it in the fridge until it becomes slightly solid.

I have four gorgeous T-Bone steaks here.

Rub the steaks with some of the garlic herb butter and season both sides well with kosher salt and pepper.

Then just a pinch of sugar on both sides too. This is a trick I learned working at a steakhouse a few years ago.

It creates a deeper color on the steak since the sugar kind of caramelizes and it helps with those grill marks.

Get that grill smoking hot over medium high heat and grill the steaks 4 to 7 minutes per side.

Cook time will depend how you like your steaks done and how thick they are.

I rely more on the temperature, so during the last few minutes, use an instant read thermometer.

We love medium steaks, so I removed these when the temperature read 140 and let them rest for several minutes.

So by the time you are ready to dig in, they will be perfect medium.

And let me just add that waiting for them to rest is excruciatingly painful!

I mean, just look at this beauty 🙂

Ingredients

  • 1 stick butter
  • 4 cloves garlic finely minced
  • 2 Tbsps chopped, fresh herbs of choice (I used thyme, rosemary, and chives)
  • 4 T-Bone steaks
  • kosher salt, pepper, sugar

Instructions

  1. Put the butter in a saucepan over medium heat, once melted add the garlic and herbs. Let that simmer for a few minutes, just enough to cook the garlic slightly.

  2. Put the butter in a container and put in the fridge until it becomes slightly solid.

  3. Rub some of the butter on all sides of the steaks and season both sides with kosher salt, pepper, and just a pinch of sugar.

  4. Preheat the grill to medium high. Once hot, grill the steaks 4 to 7 minutes per side depending on how you like them cooked and how thick they are.

    Note: I recommend using an instant read thermometer. I removed mine at 140 degrees so after they rested they were a perfect medium doneness.

  5. Let the steaks rest for a few minutes. Serve the steaks with the remaining garlic herb butter over top so the butter melts into the steaks.
