This recipe is kind of like having the best of both worlds. You get your feel-good aspect from the salad, but your indulgence side from the steak. Steak Salad with Ginger Lime Dressing is healthy AND satisfyingly delicious!
This is a 1 1/2 pound flat iron steak right here. Flank steak would work too. Marinate the steak for a few hours (or overnight) in some soy sauce, ginger paste, garlic paste, and honey.

Then grill over medium high heat for about 3-4 minutes per side. If you don’t have a grill, or it’s not the greatest grilling weather, no worries.
You could easily make this in a skillet over medium high heat with the same cook times. Just add a little olive oil to the pan first.

While the steak rests, assemble the Steak Salad with Ginger Lime Dressing
I used baby spring mix for mine, but confession…I gave my family iceberg lettuce. Making simple changes like that just to keep everyone happy at dinner is something I do often.
Some cherry or grape tomatoes sliced in half and some shredded carrots is all this salad needed in my opinion.
The steak and the dressing are the stars of the show here, so I kept the salad simple.

Ok, let’s talk dressing…Ginger Lime Dressing that is. Oh my word, this stuff is amazing! Into a mason jar goes olive oil, soy sauce, ginger paste, fresh lime juice, honey, and garlic paste.
Just shake, shake, shake, and that’s it.

It’s super easy to meal prep this recipe, just put the dressing on the side in 2 oz. containers.
