Healthy Buffalo Chicken Salad uses non fat Greek yogurt in place of mayo.

Not only does this cut calories and fat, it adds protein and vitamins…and thanks to the addition of some dry ranch seasoning you can’t even tell the difference.

Now I did add some shredded cheese, which I know isn’t really considered healthy, but you can either leave it out or only add some if you prefer.

I am using Shredded Chicken for Meal Prep, which I make and keep in the fridge to use throughout the week.

You could certainly use a rotisserie chicken from the store and shred that.

How to Make Healthy Buffalo Chicken Salad

You’ll need four cups of the shredded chicken, half of a red onion, a few celery stalks, some dry ranch seasoning, and two containers of non fat plain Greek yogurt.

This step is optional.

I like to cook the diced red onion for a few minutes in a skillet to get rid of that raw onions taste.

If you like raw onions, just add them right into the salad.

Put the chicken, diced onions, diced celery, yogurt, and dry ranch seasoning in a large bowl.

Now we make it buffalo-y 🙂

Add 1/4 cup buffalo sauce.

I used Franks, but any buffalo sauce that you like will work.

Then a cup of shredded cheese and some blue cheese if you like.

Blue cheese can get overpowering, so I only added a bit.

Now that everything is in the bowl, simply mix it up until evenly combined.

You can store this in the fridge until ready to serve…or serve it right away.

I even drizzled a little more buffalo sauce over mine 🙂

Healthy Buffalo Chicken Salad

You can add more blue cheese over top of your Healthy Buffalo Chicken Salad too 🙂

Serving options are in lettuce cups or over a bed of lettuce, on crackers, or as a wrap or sandwich.

This makes for the perfect lunch too.

It stays fresh in the fridge for a few days… if it lasts that long.

Healthy Buffalo Chicken Salad

Healthy Buffalo Chicken Salad is a low calorie chicken salad made with Greek yogurt and no mayo, but with a buffalo chicken twist

Ingredients

  • 4 cups cooked, shredded chicken
  • 1/2 red onion
  • 2 to 3 celery stalks
  • 2 5.3 containers non fat plain Greek yogurt
  • 1 1/2 Tbsps dry ranch seasoning
  • 1/4 cup buffalo sauce
  • 1 cup shredded cheese (I used Mexican blend)
  • Optional: blue cheese crumbles

Instructions

  1. Put the cooked, shredded chicken in a large bowl.

  2. Dice the onion and celery.

    Note: I cooked the onions in a skillet over medium heat for a few minutes with olive oil so they didn't have that raw onion taste, this step is optional.

  3. Add the onion, celery, Greek yogurt, dry ranch seasoning, buffalo sauce, shredded cheese, and blue cheese crumbles (if using) to the bowl with the chicken. Stir until evenly combined.

  4. Store in the fridge and serve with crackers, lettuce, or as a sandwich or wrap.
