It seems like I’ve lost my mind a little calling this recipe “Roasted” Old Bay Shrimp “Boil”…but let me explain.

It’s basically everything you would have in a traditional shrimp boil, only instead of actually boiling it, it’s roasted for maximum flavor.

Only a few simple ingredients go into this exceptionally amazing meal.

Smoked cajun andouille sausage, petite red potatoes, corn, and shrimp of course!

Smoked turkey or chicken sausage could be substituted if you’re wanting to make it a little on the lighter side.

How to make Roasted Old Bay Shrimp Boil

You do need to boil the petite potatoes for a few minutes because they wouldn’t be cooked enough if you only roasted them.

After you boil them cut in half and place on a lined baking sheet with the cut up corn, sausage, and shrimp.

I have made this dish with the shrimp shells on and off. I much prefer the flavor of leaving the shrimp shells on.

It does mean everyone shells their own shrimp at dinner, but hey, that’s part of the fun of a shrimp boil.. errr, uhhh roast 😉

Everything gets seasoned with olive oil, lemon juice, and Old Bay of course.

You can’t have an Old Bay Shrimp Boil without Old Bay!

Roasted Old Bay Shrimp Boil

Into an oven preheated to 425 degrees for 20 minutes is all it takes.

You can turn the broiler on high the last 2 minutes to make everything even more golden brown.

We love to dip the potatoes and shrimp in an Old Bay Aioli!

Just mix together mayo, Old Bay seasoning, garlic, lemon juice, and Tabasco sauce.

Roasted Old Bay Shrimp Boil

A shrimp boil all on one sheet pan and roasted in the oven

Ingredients

Roasted Old Bay Shrimp Boil

  • 1 pound petite red potatoes
  • 1 pound jumbo shrimp (shells on)
  • 1 package smoked cajun andouille sausage (approx. 1 pound)
  • 4 ears corn on the cob shucked
  • 2 Tbsps olive oil
  • 1 Tbsp lemon juice
  • 1 Tbsp Old Bay seasoning (plus a little more to sprinkle over top)

Old Bay Aioli

  • 1/2 cup mayo or light mayo
  • 1 tsp garlic paste or garlic powder
  • 1 tsp lemon juice
  • 1 tsp Old Bay seasoning
  • 5-8 dashes Tabasco sauce

Instructions

Roasted Old Bay Shrimp Boil

  1. Boil the red potatoes in salted water for 7-8 minutes. Let them cool slightly and cut them in half.

    Note: If the red potatoes are not petite in size, add a few extra minutes to boiling time.

  2. Pat the shrimp dry with paper towels. Cut the smoked sausage into 1 inch pieces. Cut each ear of corn into 3 pieces.

  3. Line a large sheet pan with foil or parchment paper. Add the potatoes, shrimp, sausage, and corn to the pan along with the olive oil, lemon juice, and Old Bay seasoning. Toss until evenly coated. Sprinkle with a little more Old Bay over top.

  4. Place the baking sheet into a 425 degree oven for 20 minutes.

    Optional: Turn the broiler on high for the last 2 minutes to make everything more golden brown if desired.

  5. Serve with the Old Bay Aioli for dipping.

    Note: Peel the shell off shrimp before eating.

Old Bay Aioli

  1. Put all ingredients in a bowl and stir until evenly mixed. Serve with the Roasted Old Bay Shrimp Boil.
