I made my dad Icebox Oreo Bars for the dessert to top off our amazing meal.
They were a hit with the whole crew, so now I share them with you to spoil the ones you love 🙂
If you have a super cool, fun, and loving dad like me, you want to spoil the heck out of him on Father’s Day!
Among other fun dishes,

How to make Icebox Oreo Bars
Icebox Oreo Bars start with a 14.3 oz. package of Oreos (which I had to hide from my kids if I wanted any left by the time I made these bars).
Take 20 of the Oreo cookies and place in a food processor to make crumbs.
Mix the Oreo crumbs with some melted butter to create the crust.
Press the buttery cookie crumbs into a 9×13 pan.

Then crush the remaining Oreo cookies by either pulsing in the food processor or chopping into pieces.
Set those aside.
Next step is mixing some cream cheese at room temp with some powdered sugar.
Mix with a hand mixer for about 3 minutes.
Beware of powdered sugar that may blow out of the bowl at first 😉

Fold in Cool Whip, that has been thawed, and about half of the crushed/ chopped Oreos.
Spread this evenly on the Oreo crust in the 9×13 pan.

Lastly sprinkle the rest of the chopped Oreos over top of the Icebox Oreo Bars and refrigerate for several hours before serving.
