Churro Cake with Caramel

My sweet grandson and I baked a this recipe for Churro Cake with Caramel together!

We usually go to the library on the day I watch him and they have a playroom with a little play kitchen.

He LOVES it!

So this week when I took care of him I thought we would cook something for real.

When we were at Disney World over the summer my son loved the churros.

He said we should make a churro cake, so that’s what I decided to make.

This is my grandson pretending to stir before we even began 🙂

How to Make Churro Cake with Caramel

This starts with a box of yellow cake mix.

But instead of following the package directions, we are making some improvements.

Add an extra egg, use butter instead of vegetable oil, and replace the water with milk.

Also some cinnamon to add to the churro part 🙂

My grandson put everything in the bowl.

All I did was measure the ingredients.

I did the hand mixer, as he was not so much a fan of the noise.

But he did like watching as I mixed this for 2 minutes.

Pour the batter into a greased 9×13 pan.

And I highly recommend getting a cute helper like him to help spread the batter evenly.

I did let him lick the spoon just once.

If he had his way he would have finished the whole spoonful, he kept saying “Mmmmmm”!

Place the cake in a 350 degree oven for 32 to 36 minutes.

When it’s still pretty warm, brush the top with melted butter.

Then sprinkle a mixture of white sugar, brown sugar, and cinnamon over top.

And then a good drizzle of caramel sauce.

At first the caramel sauce will look like this.

But since the cake is still warm, the caramel will melt evenly over the cake.

Churro Cake with Caramel

Churro Cake with Caramel uses box cake mix with extra additions so it tastes homemade and drizzled with caramel, topped with cinnamon sugar

Ingredients

Cake

  • 1 15.25 box yellow cake mix (I used Pillsbury)
  • 4 eggs
  • 1 stick melted butter
  • 1 cup milk
  • 1 tsp ground cinnamon

Topping

  • 1/3 cup white sugar
  • 1/3 cup brown sugar
  • 1 tsp ground cinnamon
  • 1 Tbsp melted butter
  • 3 to 4 oz caramel sauce (I used Ghirardelli)

Instructions

Cake

  1. Put the cake mix in a large bowl and add the eggs, melted butter, milk, and cinnamon.

    Note: These ingredients are different than package directions.

  2. Using a hand mixer, mix the batter for 2 minutes.

  3. Pour the batter into a greased 9×13 pan. Bake in a 350 degree oven for 32 to 36 minutes.

Topping

  1. Mix the white sugar, brown sugar, and cinnamon together in a small bowl.

  2. While the cake is still warm, brush the melted butter over top and sprinkle half of the cinnamon sugar mix.

  3. Drizzle the caramel over top and wait until the caramel melts, it will become an even layer after a few minutes.

  4. Sprinkle the other half of the cinnamon sugar mixture and serve.
