Grilled Caribbean Jerk Chicken

Grilled Caribbean Jerk Chicken is a must try recipe for sure!

This is seriously one of the most simple recipes I have ever made, but probably one of my all time favorites.

I kept asking my husband how this could be SO freaking delicious.

His only answer was “I know, right?!” as he devoured it.

My inspiration for this was something very similar that my son and I had at Disney’s Animal Kingdom a few months ago.

The chicken was so flavorful and juicy, I just had to try and recreate it 🙂

I think one reason it was extra good was because I used boneless, skinless chicken thighs instead of breasts.

The thighs in my opinion are a little juicier and more flavorful.

The second reason was the marinade.

How to make Grilled Caribbean Jerk Chicken

A little soy sauce, brown sugar, lime juice, along with some Caribbean Jerk seasoning.

We like heat, so I added some ground red pepper as well.

All of this goodness goes into a gallon size plastic bag and marinates overnight.

When it’s ready for the grill, sprinkle just a bit of kosher salt and pepper over top.

It does get some salt from the soy sauce and seasoning, but it does need just a little more right before grilling.

Grilling over medium high heat gives the chicken a nice char, which is my favorite part of grilling chicken.

Just a few minutes per side and it’s ready!

Ingredients

  • 2 pounds bonless, skinless chicken thighs or thin chicken breasts
  • 2 Tbsps Caribbean Jerk seasoning
  • 1 Tbsp soy sauce
  • 1 Tbsp brown sugar
  • 1 Tbsp lime juice
  • Optional: ground red pepper for spice
  • kosher salt, pepper
  • 4 lime wedges

Instructions

  1. Place the chicken in a gallon size plastic bag. Add the Caribbean Jerk seasoning, soy sauce, brown sugar, lime juice, and ground red pepper if using.

  2. Massage the bag until evenly mixed. Marinate in the fridge several hours or overnight.

  3. When ready to grill, sprinkle lightly with kosher salt and pepper. Grill over medium to medium high heat for 4-5 minutes per side.

  4. Serve with a lime wedge to squeeze over top.
