This new method of cooking the crispiest chicken thighs has been a game changer for me.
Crispy chicken skin is something that is rather difficult to create without deep frying.
That is at least until now!
How to make Crispy Baked Caribbean Jerk Chicken
One trick is adding baking powder to your Caribbean Jerk seasoning.
Add some kosher salt and pepper to taste. Some seasonings have enough salt, and some need a little salt to be added.
Another trick is to pat the chicken thighs dry with paper towels before rubbing the seasoning and baking powder.
Using a wire baking rack over a lined baking sheet also helps the chicken cook to crispy and delicious perfection.
I sprinkled a bit more of the Caribbean Jerk seasoning over top as well.
You’ll want to start this in a 475 degree oven for the first 15 minutes.
Then drop the heat down to 425 for an additional 30 minutes.
You can actually hear the skin cracking and crisping!
Caution: Let the chicken cool before digging in full force right away.
I may or may not have learned this lesson the hard way 😉
Seriously though it smells so good it’s hard to use self control.

Crispy Baked Caribbean Jerk Chicken
A secret trick to the crispiest skin with a yummy Caribbean Jerk seasoning
Ingredients
- 2 pounds chicken thighs (about 4-6 thighs)
- 1 1/2 Tbsps Caribbean Jerk seasoning (I used McCormick's) plus more to sprinkle over top if desired
- 1 tsp baking powder
- kosher salt, pepper
- Optional: ground red pepper to add heat
Instructions

Pat both sides of the chicken thighs dry with paper towels.
Note: If you prefer less skin, trim the excess skin on the bottom of each thigh using kitchen scissors leaving just the skin on the top

Combine the Caribbean Jerk seasoning, baking powder, kosher salt, pepper, and ground red pepper if using. Rub on both sides of the chicken thighs. Sprinkle more Caribbean Jerk seasoning over top if desired.

Place the chicken skin side up on a wire rack over a lined baking sheet. Put in a 475 degree oven for 15 minutes. Reduce the oven temp to 425 and cook for an additional 30 minutes.
