Superfood Energy Bites
My last recipe post was Mac and Cheese Smashed Burgers…and today I am sharing Superfood Energy Bites.
My diet is apparently all over the place đŸ˜‰
Well, I do try and eat healthy-ish and everything in moderation.
But these energy bites were actually for my daughter who is nursing her son, my adorable grandson.
Ahhhhhh, his sweet little face I couldn’t resist sharing with you!
She was telling me that oats, chia seeds, and flaxseed are good for nursing mothers.
So I made her a batch of these energy bites to help a new momma out.
I prefer the texture of whole ground flaxseed meal like this one right here rather than regular flaxseed.
How to make Superfood Energy Bites
These could not be simpler to make!
Literally in a bowl add old fashioned oats, dark chocolate, whole ground flaxseed, chia seeds, peanut butter, honey, and cinnamon.
The dark chocolate is not only a healthy super food, it also makes these extra delicious đŸ™‚
Then mix as much as you can with a spoon, and then use your hands to roll/ press them into little balls.
Yes, yes…it’s a messy job but well worth it.
Next place the Superfood Energy Bites on a lined sheet or plate and refrigerate so they set up.
Store them in the fridge in a covered container and they are good for up to a week.
They are great little snacks for anyone wanting to benefit from the extra nutritional punch these bites provide.

Superfood Energy Bites
Superfood Energy Bites pack quite the nutritional punch, lots of superfoods rolled into a delicious little energy bite for the perfect healthy snack!
Ingredients
- 1 1/4 cups Old Fashioned Oats
- 3/4 cup dark chocolate chips
- 1/2 cup whole ground flaxseed
- 1/2 cup peanut butter
- 1/2 cup honey
- 2 Tbsps chia seeds
- 1 tsp ground cinnamon
Instructions

Add all ingredients to a bowl and stir until combined.

Roll/ press them into 12 balls with your hands and place on a plate or tray. Refrigerate at least two hours.

Store extra energy balls in a container in the fridge for up to a week.
