Usually I make Black Bean and Sweet Potato Burgers either in a skillet or in my air fryer, but not this time…

I’ve been talking about getting one of those hibachi grills, but we already have a grill and a large Traeger grill/smoker on our patio.

So I was concerned about space…and guys….my husband listened!!!

For my birthday he got me a flat top griddle insert for our grill!!!

Complete with hibachi cooking tools!

Hibachi recipes and smash burgers will come soon of course, but for dinner the night he gave me this wonderful gift I was already planning on making these veggie burgers.

So I had to make them on the flat top this time 🙂

How to make Black Bean and Sweet Potato Burgers

These burgers are super healthy, and really yummy too!

Add a can of black beans, a cooked sweet potato, chopped spinach, bread crumbs to a bowl.

Oh, and olive oil, kosher salt, pepper, chili powder, paprika, cumin, garlic, and crushed red pepper flakes.

Mash this with a fork to desired consistency and then form into burger patties.

Refrigerate these for about an hour to prevent them from falling apart while they cook.

Then into a skillet (or in this case flat top grill) with some oil.

Everything is already cooked in these burgers, so just a few minutes per side to warm them and sear them.

How you choose to eat your Black Bean and Sweet Potato Burgers is up to you.

On a bun, by themselves, or even as a lettuce wrap are all good options.

We served ours on brioche buns and with some cilantro and a mixture of Sriracha and mayo.

The texture is a lot softer compared to a traditional burger, but the flavor is extra special 🙂

Black Bean and Sweet Potato Burgers

Black Bean and Sweet Potato Burgers are a healthy and easy vegetarian meal, they can be made in a skillet or air fryer and served on a bun or lettuce wrap!

Ingredients

  • 1 15 oz can black beans drained and rinsed
  • 1 sweet potato cooked and mashed
  • 1/4 cup bread crumbs
  • 1 1/4 cup finely chopped, fresh spinach
  • 3 cloves garlic minced
  • 1 Tbsp olive oil
  • 1 tsp chili powder
  • 1 tsp paprika
  • 1/2 tsp cumin
  • kosher salt, pepper, crushed red pepper flakes
  • Optional: buns, lettuce wraps, topping of choice such as cilantro, ketchup. mayo, pickles, etc.

Instructions

  1. Add the black beans to a bowl and mash them slightly with a fork. Add the cooked, mashed sweet potato, bread crumbs, spinach, garlic, olive oil, chili powder, paprika, cumin, kosher salt, pepper, and crushed red pepper flakes. Mix with your hands or a spoon until evenly combined.

  2. Form into four burger patties and place on a tray and refrigerate for 1 hour.

  3. Cook the burgers according to one of these methods:

    Air Fryer- Place the burgers in the air fryer basket, set the air fryer to 390 degrees for 8 to 10 minutes.

    Skillet- Add a Tbsp of olive oil to a skillet over medium heat. Cook the burgers 4 to 5 minutes per side.

  4. Serve on buns or lettuce wraps with toppings such as cilantro, ketchup, mayo, pickles, etc.
