Garlic Parmesan Fingerling Potatoes
I made Garlic Rosemary Fingerling Potatoes a few weeks ago on the grill, and they were SO good that I couldn’t wait to have them again. Only I went with this recipe for Garlic Parmesan Fingerling Potatoes.
This time I roasted them in the oven and they were just as delicious.
Honestly, the first time I bought the bag of fingerling potatoes at the store, I had no idea that half of them would be purple!
Most people may be kinda freaked out.
But I ran to show my family like an excited idiot yelling “Look how pretty!!!”.
They were not nearly as excited, but they did all love them at dinner đŸ™‚
And they have become the most requested side dish by my daughter’s boyfriend when he comes to dinner.
How to Make Garlic Parmesan Fingerling Potatoes
Just some melted butter, garlic paste, grated parmesan, fresh thyme, kosher salt, and pepper go into a bowl with the potatoes.
Toss to coat evenly and place on a lined baking sheet.
They go into a 400 degree oven for 30 minutes.
I served them with more fresh thyme sprinkled over top.
No need to flip them or turn them at all, which is always nice.
I’m usually a dipper.
I love sauces and dips and relishes with my food, but these Garlic Parmesan Fingerling Potatoes are actually better just like this đŸ™‚

Garlic Parmesan Fingerling Potatoes
One of my family's favorite and most requested side dishes, and super easy to make!
Ingredients
- 1 1/2 pounds fingerling potatoes
- 3 Tbsps melted butter
- 1 Tbsp garlic paste or fresh minced garlic
- 1/4 cup grated parmesan cheese
- kosher salt, pepper, fresh thyme leaves
Instructions

Slice the potatoes in half lengthwise and place in a bowl.

Pour the melted butter on top of the potatoes and add garlic paste, parmesan cheese, kosher salt, pepper, and fresh thyme leaves. Toss to coat evenly.

Place the potatoes on a lined baking sheet. Bake in a 400 degree oven for 30 minutes.

Serve with more fresh thyme leaves sprinkled over top.
