One Pan Chicken Sausage Sweet Potatoes and Apples
The crisp, cool weather inspired me to create this One Pan Chicken Sausage Sweet Potatoes and Apples recipe.
It’s finally starting to feel like fall around here!
It’s mid October, but last week we were still in the upper 90’s.
Finally mid 50’s are here this week and I love it :)!
It has the perfect blend of ingredients that, to me, screams fall 🙂
How to Make One Pan Chicken Sausage Sweet Potatoes and Apples
I started with two sweet potatoes, with the skins, and diced them into about 1/2 inch cubes.
The goal is get them all right around the same size, but perfection is overrated.
So if you have a few teeny tinys and a few biggins’ it’s fine, no worries.
Bake these in a 400 degree oven for 10 minutes first.
Next step is to add a diced onion, 2 diced Honeycrisp apples, sliced smoked chicken sausage.
Along with some olive oil, kosher salt, pepper, season salt, cinnamon, and fresh thyme leaves.
Toss it all together and back into the 400 degree oven for another 10 minutes.
Last step is adding some dried cranberries, toss it around again, and bake 10 more minutes, plus 2 more minutes with the broiler on high.
Taste for seasoning and add more kosher salt, pepper, or season salt if needed.
Serve One Pan Chicken Sausage Sweet Potatoes and Apples with more fresh thyme leaves over top 🙂

One Pan Chicken Sausage Sweet Potatoes and Apples
An easy and delicious one pan meal that's super healthy
Ingredients
- 2 sweet potatoes
- 1 large red onion
- 2 large Honeycrisp or Granny Smith apples
- 1 pound smoked/already cooked chicken sausage
- olive oil, kosher salt, pepper, season salt
- 1 tsp ground cinnamon
- 1 Tbsp fresh thyme leaves
- 1/2 cup dried cranberries
Instructions

Dice the sweet potatoes (with the skin) into 1/2 inch cubes and place on a lined baking sheet. Drizzle with olive oil and season with kosher salt and pepper. Toss until evenly coated. Put the baking sheet into a 400 degree oven for 10 minutes.

As the sweet potatoes cook, dice the onion and apples into similar size chunks as the sweet potatoes. Cut the cooked chicken sausage in 1/2 inch slices.

Add the onions, apples, and chicken sausage to the pan with the sweet potatoes. Drizzle with more olive oil and season with kosher salt, pepper, season salt, cinnamon, and half of the thyme leaves. Toss until evenly coated and put back into the 400 degree oven for 10 more minutes.

Add the dried cranberries, toss until evenly coated and return to the oven for another 10 minutes. Turn the broiler on high for an additional 2 minutes if you want the top crispy and brown.

Taste for seasoning, add more kosher salt, pepper, or season salt if needed. Serve with the remaining fresh thyme leaves sprinkled over top.
