Green Beans with Pine Nuts and Feta
This easy side dish recipe for Green Beans with Pine Nuts and Feta is what I came up with using leftovers.
I had some extra feta cheese and pine nuts from making Grilled Mediterranean Chicken.
And so my mission began…just how could I use these leftovers?!
The crunch from the nuts and the saltiness from the cheese transform regular green beans into a unique and flavorful side dish.
How to make Green Beans with Pine Nuts and Feta
A pound of green beans is what we are starting with.
I trimmed the ends, got rid of any yucky ones, and cut them into 1 to 2 inch pieces.
They don’t have to all be the same size…perfection is overrated, right?!
Boil the green beans in some salted water to start for 4 to 5 minutes, then transfer them into a skillet.
I had already started cooking an onion in the skillet as the green beans boiled.
Add butter, garlic powder, kosher salt, and pepper as well.
This will cook for about 4 to 5 more minutes.

Roughly chop half a cup of toasted pine nuts.
Again, it’s perfectly fine if they are different sizes.
Mix in the chopped pine nuts and feta cheese.
Taste for seasoning as well. Add more kosher salt, pepper, and/or garlic powder if needed.
My kids took one look at these Green Beans with Pine Nuts and Feta and were like “Ummm, no way mom”.
But seriously after seeing how much my husband and I raved about them they ended up trying and loving them.

Green Beans with Pine Nuts and Feta
An elegant and scrumptious green bean side dish that everyone will be wowed over
Ingredients
- 1 pound green beans
- 1 Tbsp olive oil
- 1 onion diced
- 2 Tbsps butter
- 1 tsp garlic powder
- kosher salt, pepper
- 1/2 cup toasted pine nuts
- 1/2 cup crumbled feta cheese
Instructions

Cut the ends off of the green beans and cut the green beans into about 1 to 2 inch pieces.

Bring a pot of water to a boil and salt the water. Add the green beans and boil for 5 minutes, drain the water and set the green beans aside.

In a skillet over medium heat add the olive oil and diced onion. Cook 4-5 minutes, stirring occasionally. Add the green beans, butter, and garlic powder, season with kosher salt and pepper to taste. Cook 4-5 minutes, stirring occasionally.

Chop the pine nuts. Sprinkle the chopped pine nuts and feta over the green beans. Taste for seasoning and add more kosher salt or pepper if needed.
