I browse through cookbooks, restaurant menus, and Pinterest a lot when looking for new ideas to create dishes, and I always add or change things to make them my own.
I’ve been seeing a lot of baked burritos and chicken avocado wraps on Pinterest lately and you want to know what my first thought was…?
BACON!
Bacon and avocados go together like peanut butter and jelly in my opinion.
I also love crunch, so putting these perfect, simple ingredients together in a crunchy, golden, baked burrito seemed like a great idea.
If you’re kids don’t care for one of the ingredients, just make theirs without something.
I’m not about to make everyone their own personalized dinner if it requires effort from me.
But simple substitutions and changes are do-able if it means everyone is happy.
How to Make Chicken Avocado and BACON Baked Burritos!
I made my simple shredded chicken a few days ago and kept in the fridge.
It makes coming home from a long day at work and making dinner much quicker to not have to make the chicken.
It’s already ready to go đŸ™‚
Lay out a burrito size tortilla and stuff full of shredded chicken, avocado slices, bacon, monterey jack cheese (or cheese of your choice).
And cilantro and fold it up into a cute little burrito.
Lime would a good addition too.
Brush all sides with olive oil and bake at 425 for 10- 15 minutes.
My daughter likes to dip hers in ranch and my husband loves to add hot sauce.
I love them just the way they are.
We served them with Baked Sweet Potato Wedges and they were an amazing combination!

Chicken Avocado and Bacon Baked Burritos
Baked burritos that are crispy and delicious
Ingredients
- 4 soft tortillas burrito size
- 2 cups shredded chicken
- 1/2 pound bacon cooked and crumbled
- 1 cup shredded cheese (cheddar or monterey jack)
- 1 avocado sliced
- Optional: cilantro, lime, ranch dressing, hot sauce
- olive oil
Instructions

Lay flour tortillas flat and add chicken, bacon, cheese, avocado, and any other ingredients you wish in the middle of the tortilla.

Fold the sides in and roll the tortilla to close. Place seam side down on a baking sheet.

Brush with olive oil on all sides, being careful with the seam side to stay closed.

Bake at 425 degrees for 10-15 minutes until golden and crispy. Dip in ranch or add hot sauce for an extra kick.
