Ginger Lime Salmon Salad

This Ginger Lime Salmon Salad recipe is packed full of so much goodness… both deliciousness and also healthy superfoods.

Salmon, walnuts, avocado, and this healthy homemade dressing with olive oil and ginger are ALL ingredients that are recommended to eat a lot of.

My mid-forty self is really trying to eat more superfoods, but without making it feel like I’m eating healthy.

This dinner is a win-win đŸ™‚

How to Make Ginger Lime Salmon Salad

The dressing is a mixture of olive oil, dijon mustard, honey, and of course some ginger and lime.

I like making vinaigrette dressings in a mason jar.

That way I just put everything in, give it a shake, and it’s done.

So half a cup of olive oil, 1/4 cup lime juice, and a tablespoon each grated ginger, honey, and dijon mustard go in the jar.

Along with some kosher salt and pepper.

Remove a few spoonfuls of the dressing to brush on the salmon.

And set the rest of the dressing aside for serving with the salads.

Brush some of the dressing on, and save some for brushing halfway through cooking.

And season with more kosher salt and pepper.

You can bake these on a baking sheet in a 400 degree oven for 9 to 10 minutes.

Or cook them in the air fryer at the same time and temp, 400 degrees for 9 to 10 minutes.

Whatever your cooking method, brush with more of the ginger lime dressing halfway through đŸ™‚

Let the salmon cool while you make the salads.

Add any toppings you like… I went with avocado, walnuts, cucumber, and tomatoes.

I am using chopped romaine lettuce for this salad.

Just chop it up and divide between four bowl, plates, or containers if you are meal prepping this salad.

Ginger Lime Salmon Salad is a healthy recipe with salmon cooked in the air fryer and a healthy homemade salad dressing

Ingredients

  • 1/2 cup olive oil
  • 1/4 cup lime juice
  • 1 Tbsp grated ginger or ginger paste
  • 1 Tbsp honey
  • 1 Tbsp dijon mustard
  • kosher salt, pepper
  • 1 pound salmon (cut into 2 to 4 smaller fillets)
  • 6 cups lettuce of choice (I used chopped romaine)
  • Salad toppings of choice (I used diced cucumber, avocado, walnuts, and tomatoes)

Instructions

  1. Put the olive oil, lime juice, ginger, honey, dijon mustard, kosher salt, and pepper in a mason jar or container with lid. Shake until combined.

  2. Remove a few spoonfuls of the dressing and store the remaining dressing with the lid in the fridge.

  3. Brush the salmon fillets with most of the dressing that you removed from the jar and season with kosher salt and pepper. Cook the salmon in the air fryer set to 400 degrees for 9 to 10 minutes, or on a baking sheet in a 400 degree oven for 9 to 10 minutes.

    Brush with more dressing halfway through cooking.

  4. Let the salmon cool while you assemble the salads. Divide the lettuce between four plates or bowls. Add salad toppings of choice such as cucumber, avocado, walnuts, and tomatoes.

  5. Once the salmon is cool, add a piece of salmon to each salad and serve with the ginger lime dressing.
