
Roasted Green Beans and Mushrooms
Roasted Green Beans and Mushrooms takes about 5 minutes to prepare, and once it’s in the oven you can forget about it and focus on whatever delicious meal you are preparing to go along with it.
I am always in search of simple, healthy vegetable side dishes recipes, and this one is perfection.
All of my kids and my husband loved it, so that’s always a plus!
I do use canned green beans sometimes, but you’ll for sure need fresh for this dish.
How to make Roasted Green Beans and Mushrooms
I cut the stems from the green beans, slice the mushrooms, and place them on a lined baking sheet.
Drizzle with olive oil, kosher salt, and pepper, toss until evenly coated…and that’s it.

Pop these babies into a 400 degree oven for 20 minutes and they are ready.
You don’t even have to turn them or anything.
Super simple and easy.
I like to add some crushed red pepper to my Roasted Green Beans and Mushrooms for a little heat.
And my husband likes a sprinkle of parmesan, but they are so good just like this 🙂

Roasted Green Beans and Mushrooms
An easy and delicious one pan side dish.
Ingredients
- 1 pound fresh green beans
- 8 oz mushrooms of choice
- olive oil, kosher salt, pepper
- Optional: crushed red pepper, parmesan cheese
Instructions

Cut the stems from the green beans. Slice mushrooms. Place green beans and mushrooms on a baking sheet.

Drizzle with olive oil and sprinkle with kosher salt and pepper. Toss until evenly coated.

Place the baking sheet in a 400 degree oven. Roast for 20 minutes.

Serve immediately. Sprinkle with crushed red pepper flake and/or parmesan cheese if desired.
