Grilled Parmesan Zucchini
Sweet summertime means lots of fresh zucchini from the garden around here. One of my favorite ways to prepare it is making this easy and healthy Grilled Parmesan Zucchini recipe.
If we are already having something grilled for dinner (which is usually the case in the summer), it’s a great side dish because the grill is already on.
And they only take about 3 minutes per side.
I just love simple vegetable side dishes like this!
My husband was a little skeptical at first, like really dear…just grilled zucchini?!
He tried it and LOVED it, he even asked for seconds!
How to make Grilled Parmesan Zucchini
Just slice the zucchini into 1/4 inch slices and brush with olive oil on both sides.
Sprinkle with kosher salt, pepper, and grated parmesan cheese.
Press the parmesan into the zucchini a little with your fingers.
Yes, some will not stick and fall off, but I promise enough will stick during the grilling.
We already had the grill on medium high, so after our chicken was done I put the zucchini slices on the grill for 3 minutes per side.
The cheese melts and bubbles and gets kind of crispy, and the charred marks are gorgeously delicious!
I like to sprinkle a little more parmesan on top.
And my husband had his with ranch dressing and bit more parmesan as well.
I mean, if I’m getting him to eat a vegetable I won’t complain about a little ranch on top.
Helpful tip: I usually use tongs to flip on the grill. But for these, use a metal grilling spatula to flip.
They do stick slightly, so the spatula helps scrape them up perfectly and makes it very easy to flip 🙂

Grilled Parmesan Zucchini
A simple and light side dish with garden fresh zucchini.
Ingredients
- 2 zucchinis
- olive oil, kosher salt, pepper
- 2 Tbsps grated parmesan cheese
- Optional: Ranch dressing
Instructions

Slice each zucchini lengthwise into 1/4 inch strips. Each zucchini should make 4-5 strips.

Brush each strip on both sides with olive oil, sprinkle with kosher salt, pepper, and parmesan cheese. Press the cheese into the zucchini slightly with fingers.

Grill over medium high heat for 3 minutes per side. Use a grill spatula to flip them as they will stick slightly.
Note: If using a Traeger Grill set to 450 degrees and cook 5 minutes per side.

Serve with more parmesan cheese over top, or ranch dressing if desired.
