When I told him about this recipe he was pumped.

He loved it just as much as the asparagus.

Made me feel a little less guilty that he ate these since he was having box mac and cheese for his other side at dinner 😉

How to make Air Fryer Garlic Parmesan Zucchini

Simply slice two zucchini into 1/4 inch slices.

These were medium to small in size.

Toss them in a bowl with some olive oil, garlic powder, grated parmesan cheese, Italian seasoning, plus a little kosher salt and pepper.

Then lay them flat in your air fryer. It’s perfectly fine if they overlap slightly.

Depending on your air fryer size, you may need to do them in two batches.

Sprinkle with a little more parmesan cheese over top.

Everyone loves some extra cheesy goodness, right?!

Next just set your air fryer for 12 minutes at 400 degrees.

Your kitchen will start to smell garlic-y and fabulous about 2 minutes in.

These are not meant to be super crispy.

The cheese has a nice crisp, but the zucchini slices themselves have a softer texture and are super flavorful.

Remove them with tongs or a fork and serve these Garlic Parmesan Air Fryer Zucchini with your favorite meal.

Garlic Parmesan Air Fryer Zucchini

Ingredients

  • 2 small to medium size zucchini
  • 1 Tbsp olive oil
  • 2 Tbsps grated parmesan cheese (plus more to sprinkle over top)
  • 3/4 Tbsp garlic powder
  • 1/2 Tbsp Italian seasoning
  • kosher salt, pepper

Instructions

  1. Slice the zucchini in 1/4 inch slices. Place in a bowl and add olive oil, parmesan cheese, garlic powder, Italian seasoning, and kosher salt and pepper to taste.

  2. Toss until evenly coated. Place in the air fryer basket, it’s ok if they overlap slightly. Sprinkle a little more parmesan over top.

    Note: Depending on the size of your air fryer you may need to do these in two batches.

  3. Set the air fryer for 12 minutes at 400 degrees.
