Taco Cornbread Casserole

Taco Cornbread Casserole is an easy dinner recipe, but also kinda fun with adding all the extra toppings.

Seemed like a special way to mix up Taco Tuesday!

It starts with a cornbread layer, then taco meat, and cheesy goodness which is simple enough.

But setting out some lettuce, sour cream, hot sauce…

You know, ALL the yummy taco toppings…

Everyone can create their own dinner that’s perfectly perfect for them.

How to Make Taco Cornbread Casserole

Set out the ingredients to start.

A box of Jiffy corn muffin mix was what I used because it’s the perfect size for my 10 inch pie dish.

Some other brands might make way too much cornbread for the amount of taco meat.

Make the mix according to the package directions.

So the dry mix, an egg, and 1/3 cup milk get whisked together in a bowl.

Pour the batter in a greased 10 inch pie dish or cast iron skillet.

And bake in a 400 degree oven for 12 to 14 minutes.

This is less time than it says on the package, but they recommend a smaller 8×8 pan.

And we need the extra space to fit all the taco goodness đŸ™‚

While the cornbread bakes, make the taco meat.

I browned a pound of ground beef in a skillet over medium heat.

Then followed the directions on my packet of taco seasoning.

I’m a “take-help-from-the-store” type of home cook, so I use the packet to (somewhat đŸ˜‰ )maintain my sanity.

But if you have a homemade taco seasoning, by all means, use that.

Once the cornbread is cooked, we can assemble the casserole.

Which does not take long at all.

Spread the taco meat in a single layer over the cornbread.

Then two cups shredded cheese over the taco meat in an even layer.

And back into the 400 degree oven for 5 to 7 more minutes.

Really just enough time to melt the cheese.

So this is your basic taco casserole, but setting out the toppings is where things get interesting đŸ™‚

Some lettuce, hot sauce, sour cream, salsa, and not pictured were the jalapenos and cilantro.

Ingredients

  • 1 8.5 oz box Jiffy cornbread/ corn muffin mix
  • 1 egg
  • 1/3 cup milk
  • 1 pound ground beef
  • 1 packet taco seasoning
  • 2 cups shredded cheese (I used Mexican blend)
  • Taco toppings of choice: shredded lettuce, sour cream, salso, hot sauce, cilantro, jalapenos, etc.

Instructions

  1. Put the Jiffy mix, an egg, and 1/3 cup milk in a bowl. Stir until evenly mixed. Pour the batter into a greased 10 inch pie pan or 10 inch cast iron skillet.

  2. Bake the cornbread in a 400 degree oven for 12 to 14 minutes.

  3. While the cornbread is baking, set a skillet over medium heat and once hot, add the ground beef, cook 5 to 6 minutes breaking it apart as it cooks. Pour out excess grease and add the taco seasoning packet according to the packet directions.

  4. Once the cornbread is done, add the taco meat and top with the shredded cheese. Put back in the 400 degree oven for 5 to 7 more minutes.

  5. Serve with taco toppings of choice such as shredded lettuce, sour cream, salso, hot sauce, cilantro, jalapenos, etc.
