Simple Crock Pot Taco Chicken
When having a taco bar party or just wanting an easy dinner idea, this recipe for Simple Crock Pot Taco Chicken is perfect!
Just 5 ingredients and you will have the BEST slow cooker chicken for tacos, burritos, nachos, or quesadillas!
I actually made mine into a taco salad for a lower carb option.
How to make Simple Crock Pot Taco Chicken
First cut 3 1/2 pounds of boneless skinless chicken thighs into 1 to 2 inch pieces.
The chicken thighs are cheaper than chicken breasts, plus sooooo much more flavorful and juicy.
Then add a diced onion, minced garlic, 2 taco seasoning packets, a little kosher salt, and pepper.
Plus two tablespoons of chicken base like Better Than Bouillon and just a little water.
Then give it a stir.
And turn your Crock Pot slow cooker to low for 6 to 8 hours.
Or on high for 3 to 4 hours.
Shred the chicken with two fork right in the slow cooker.
They are already in bite size pieces, so this isn’t 100% necessary, but I do prefer the smaller bits after shredding.

Simple Crock Pot Taco Chicken
Simple Crock Pot Taco Chicken is an easy 5 ingredient recipe for flavorful chicken tacos perfect to feed a crowd or for a taco bar party!
Ingredients
- 3 1/2 pounds boneless skinless chicken thighs cut in 1 to 2 inch pieces
- 2 taco seasoning packets
- 1 onion diced
- 6 to 8 cloves garlic minced
- 2 tablespoons chicken base (I used Better Than Bouillon)
- 1/4 cup water
- kosher salt, pepper
Instructions

Put the chicken, taco seasoning packets, onion, garlic, chicken base, water, kosher salt, and pepper in the slow cooker. Stir until combined.

Turn the slow cooker on low for 6 to 8 hours (or on high for 3 to 4 hours). Shred the chicken with two forks right in the slow cooker before serving as chicken tacos or use as nacho topping, burritos, or taco salads.
